Quinoa Mango Salad for #Food of the World

This month's country for 'Food of the World' event is Senegal, a country located in West Africa. I wasn't familiar with Senegal or Senegalese cuisine until I started looking for recipes for this event. I made this simple quinoa salad with mango from here.

Since Senegal borders the Atlantic Ocean, fish is a very important component in the cooking. Most other meats are also popular except for pork due to the nation's large muslim population. Peanuts are the primary crop of Senegal along with couscous, white rice, sweet potatoes, lentils and various vegetables.

Laotian Eggplant with Tomatoes for #Food of the World

We are visiting Laos this month for the Food of the World event. I made this Laotian Eggplant with Tomatoes and Mint recipe from Vegetarian Times magazine.

Laos is a landlocked country bordered by Myanmar and China to the northwest, Vietnam to the east, Cambodia to the south and Thailand to the West. I've heard about Laos, but had very limited knowledge of the country or the cuisine. A little googling later, I learnt (from Wiki) that steamed sticky rice is the staple food of Laos and they eat more sticky rice than any other country in the world.

Egyptian Ghorayebah or Ghreybeh Cookies for #Food of the World

For this month's Food of the World event, we are going to Egypt. I have a ton of vegetarian Egyptian recipes bookmarked that I wanted to try for today, but then I ended up making these easy-to-make 3-ingredient cookies.

I met some of my blog buddies last month and I was wondering what to take for them. Then I googled for Egyptian cookies and these Ghorayabeh or Ghreybeh came up. Like I said the recipe only has 3 ingredients and is very easy to put together with ingredients straight from the pantry. Some of the recipes had cardamom, but I kept it plain. If you want add a little ground cardamom or vanilla to flavor the cookies.

Afghan Cookies for #Food of the World

It seems like Super Tuesday today with 3 posts back to back. It's time for Food of the World monthly event and we are exploring the beautiful island country of New Zealand this month. I really had no clue what the food in New Zealand looks like. Even though it is one of the countries that I think I was very familiar -- blame it on the cricket matches I used to watch as a kid (they were quite a tough team to beat at the time).

So I googled and found out that New Zealand cuisine is largely based on local ingredients. Similar to it's neighboring country Australia, New Zealand cuisine is a diverse British based cuisine. Historical influences came from Maori culture, the indigenous polynesian people of NZ.

Sabich (Israeli Vegetarian Sandwich) for #Food of the World

We are visiting the beautiful Middle Eastern country of Israel for this month's Food of the World event. Israeli cuisine includes local dishes by native Israelis and the Jewish dishes brought in by the Jews from the Diaspora. One of the most popular Israeli dish, Shashuka (eggs poached in spicy tomato sauce) was my fist pick for today, but then I saw this mouth watering Sabich sandwich on Serious Eats and it looked too good to pass up.

Sabich is an Israeli street food. It is supposed to be influenced from Iraqi Jewish immigrants. The Israelis took a traditional Iraqi breakfast spread of fried eggplants, boiled eggs etc and put it in a pita and made into a trendy delicacy.

Russian Grated Beet Salad for #Food of the World

We are visiting Russia this month for the #Food of the World event. I picked a very easy Russian grated beet salad from Natasha's Kitchen.

I have tried a few Russian recipes in the past and for this month I was planning to try my hand at baking a Russian bread, but time just slipped out of my hand and I finally had to pick something relatively simple. That is when I landed on Natasha's grated beet salad.

Norwegian Apple Trifle for #Food of the World

We are going all the way to Norway for this month's #Food of the World event. I have little knowledge of Norwegian cuisine, so I went looking for recipes online. Thankfully I found this amazing blog, Nordic Diner, written by Trude who lives in Oslo now but spend her childhood in Northern Norway.

Thai Curried Noodles for #Food of the World

We are visiting Thailand for this month's Food of the World event. Thai cuisine is one of my favorite and I have tried and posted quite a few Thai dishes on the blog. I looked through my 'Buddha's Table' cookbook and found this Curried Noodles recipe.

This is a spicy and delicious dish that is perfect to serve on a chilly winter day. The list of ingredients is long but all of them are easily available in well stocked Asian grocery stores. I made a trip to my local Korean market to get the noodles and some other ingredients and I was set to make the dish.

Swedish Rice Pudding for #Food of the World

We are going to Sweden for this month's edition of #Food of the World event. I have tried and posted quite a few Swedish recipes in the past, but I still have a lot bookmarked to try. Swedish Cinnamon rolls aka kanelbullar are on the top of that list. But I posted this sticky pecan bread today, so didn't want to make something similar again.

After searching for vegetarian Swedish recipes, I finalized this simple and easy to make Rice pudding aka Risgrynsgröt. Being a south Indian, rice based dishes are always welcome and this rice pudding is very similar to our very own paramannam except the Swedish version is spiced with cinnamon whereas the Indian version has cardamom.

Canadian Nanaimo Bars for #Food of the World

For this month's #Food of the World event, we are visiting our neighbor Canada. The first dish that came to my mind when I thought of Canada was Nanaimo Bars. But I wanted to do my due diligence and googled for vegetarian Canadian dishes. None of the results I got motivated or inspired me to make the dish. So I went back to Nanaimo bars -- and I'm very glad I did.

Nanaimo bar is a popular Canadian dessert that requires no baking and is named after the city in which it was first created. It consists of a wafer crumb-based bottom layer topped with a custard flavored butter icing which is finally covered with melted chocolate. There are quite a few variations to the base recipe and are made with different types of crumb, different flavors for the icing (like Nutella, peanut butter, mint etc) and different types of chocolate topping.

Vegetarian Paprikash with Dumplings for #Food of the World

For this month's #Food of the World event, we are visiting Hungary. I have heard a lot of Hungarian food, but never really tasted or made it myself. Like most other European countries, traditional Hungarian dishes are primarily based on meats, seasonal vegetables, bread, dairy products and cheese.
Hungarians are especially passionate about their meat stews, casseroles, steaks and so on. Hungarian Goulash is very popular and I've seen it being made on TV many times and in fact a vegetarian version of it was my first choice to make for today. Goulash is a stew or a soup made with meat, paprika, caraway, vegetables and potatoes or various tiny dumplings or pasta simmered with the meat.

Other famous Hungarian stews include paprikas (a paprika stew simmered in thick creamy paprika gray) and porhoit and so on. Different kinds of noodles and dumplings, potatoes and rice are commonly served as side dishes.

Japanese Eggplants broiled with Miso (Nasu Dengaku)

After cooking more than 1 dish for the mega blogging marathon, I think I got in the habit of making more dishes. So here I am with the second Japanese dish for #Food of the World event that I served with Miso Noodle Soup.
I planted 2 eggplant plants in my raised garden bed and after waiting the whole summer, they have just started to grow some beautiful, long Japanese eggplants. I wanted to make a Japanese dish using them and found this simple Broiled Japanese eggplants with miso recipe on Fatfree Vegan's site.

Japanese Miso Noodle Soup for #Food of the World

For this month's #Food of the World event, we are visiting the beautiful country of Japan. My knowledge of Japanese food is very limited and I've only eaten it a couple of times. We have a Mitsuwa close to our house with a huge food court, but I didn't find many vegetarian options there, so never really tasted Japanese food outside except for the couple of dishes I made at home.

As I was looking for Japanese recipes to make, I found this simple Miso noodle soup recipe in Vegetarian Times magazine. I had all the ingredients on hand, so made it right away. It is a light and tasty soup. I slurped the entire bowl you see in the picture :-) I added a few dashes of hot sauce to spice it up but otherwise it is a great tasting soup.

Indonesian Tofu Satay for #Food of the World

For this month's #Food of the world event, we are visiting the beautiful island of Aruba. It is an island country in the southern Caribbean sea. It is one of the 4 constituent countries that form the Kingdom of Netherlands along with the Netherlands, Curaçao and Sint Maarten. 
Traditional Aruban cuisine includes dishes with goat meat, stoba-stew pots filled with vegetables that are locally grown - fish and maize. Finding a vegetarian recipe turned out to be quite challenging. Luckily Mir, my dear blog buddy and a fellow food of the world member, offered to help because her mom is Aruban. I jumped right away and took up the offer.

She emailed me quite a few vegetarian options for Aruban food. She also mentioned that Aruba has a very large population of Indonesian because it is a Dutch island and Indonesia was the largest former Dutch Island. and Arubans also eat a lot of Indonesian food.

Cuban Black Beans for #Food of the World (Vegan Recipe)

For this month's #Food of the World event, we are traveling to Cuba. Cuban cuisine is quite new to me. I've never made any Cuban dishes at home nor tried anything outside. So I took to Google looking for vegetarian Cuban recipes.
Cuban cuisine is a fusion of Spanish and Caribbean cuisines. Cuban recipes share spices and techniques with Spanish cooking, with some Caribbean influence in spice and flavor. Traditional Cuban meal is not served in courses, all the dishes are served that the same time.

The typical meal consists of plantains, black beans, Cuban bread, pork with onions and tropical fruits. Black beans and rice, referred to Moros and plantains are staples of the Cuban diet. Garlic, cumin, oregano and bay leaves are the dominant spices.

Mofo gasy or Madagascar Yeasted Pancakes for #Food of the World

We are visiting Madagascar this month for #Food of the World event. Madagascar is an island country in the Indian Ocean, off the coast of Southeast Africa. The Malagasy cuisine is influenced by Southeast Asian, Indian, Chinese and European migrants who have settled on the island. Rice is the staple food and is eaten at almost all of the meals.

It was quite a challenge to find authentic vegetarian recipes from this Island country. There were quite a few versions of coconut rice that I could have tried but didn't feel like making just rice :-)

Indonesian Nasi Goreng for #Food of the World

We are going to Indonesia this month's #food of the world event. I made a very simple Indonesian dish called 'Nasi Goreng'. Nasi Goreng literally means 'fried rice' in Indonesia and it is simple rice dish spiced with kecap manis (sweet soy sauce), shallot, garlic and chili and is accompanied by other ingredients like egg or other protein.

Nasi Goreng is stronger and spicier compared to Chinese fried rice with the addition of kecap manis and other spices. It can be eaten at any time of the day and many Indonesians eat it for breakfast. It is also a popular choice for late night supper served by street vendors.

Spicy Korean Tofu with Pear Slaw for #Food of the World

For this month's #Food of the World event, we are going to South Korea. The town we live in has a large Korean population in fact one of our next door neighbors are Korean. We have a very big Korean grocery store in town (actually that is the only store we have in town) and they have pretty much everything you need to make a Korean dish at home.

For today, I actually wanted to make another dish and bought the ingredients too. It was a cold noodle dish and the noodles I bought completely clumped up after boiling. Not sure what went wrong and then I had to change plans and make this tofu.

Vegetarian Lebanese Stew with Peas and Rice (Bazelle with Riz) for #Food of the World

For this month's Food of the World event, we are going to Lebanon. While browsing through the internet for vegetarian Lebanese dishes, I landed on this page with a ton of recipes to choose from. I finally narrowed the whole list down to about 10 dishes, but more than half of them were desserts and I had to resist the temptation of making those rich and creamy desserts. I have them bookmarked and will pace them out and try them in the future.
Vegetarian Lebanese Stew with Peas and Rice
At the end, I made this vegetarian version of Lebanese Stew with Peas. Traditionally this dish is made with beef or lamb mince. I used soy granules/ TVP instead. The highlight of the dish is the Baharat spice blend that is added to the stew. It is a mix of ground spices and it adds a nice warmth and lot of flavor to the dish.

Brazilian Kale & Lentil Soup for #Food of the World (Sopa de Lentlhas com Couve)

We are going to Brazil for this month's #Food of the World event. I had couple of Brazilian recipes bookmarked from our A-Z International series, but both of them happened to be desserts and I was in no mood to make anything sweet. So after looking around for vegetarian recipes, I found this hearty and comforting lentil and kale soup on Cynthia Presser's blog.

I had a bag of kale ready to be used and I also had some brown lentils (aka masoor dal) in the pantry. I think the original recipe had green lentils but the brown ones were just as good.
