Malaysian Curry Sauce

Roti Canai is usually served with a creamy curry sauce. The one served in our nearby Penang restaurant is made with chicken, so I've never tasted it myself. While surfing for Malaysian curry sauces, I found this one with potato and like I said before in my previous post, anything with potato is welcome in my house.
Vegetarian Malaysian Potato Curry Sauce
This curry sauce is made with generous quantity of coconut cream. But I subbed it with regular coconut milk and the sauce was still creamy and delicious. It tasted great with roti canai and even with some plain rice. I also added some green peas to add some protein to the dish.

Next we stop in Malaysia for an addictive combo of Roti Canai with Curry sauce. Some influence of Indian cuisine can be seen in Malaysian cuisine and this combo of roti with curry reflects a lot of it.

We have a really good Penang restaurant near us and they serve delicious roti canai. Unfortunately the curry sauce has chicken in it, so we end up eating just the bread. Penang is a state in Malaysia and is touted as the food capital of Malaysia.

Dish: Vegetarian Malaysian Curry with Coconut Milk
We are going to the Malaysia today. It is located in Southeast Asia. The country is multi-ethnic and multi-cultural. The population can be broadly divided into 3 ethnic groups: Malays, Chinese & Indian. Most of the Malaysian dishes have strong influences of all these countries.
One of my very good friends is from Malaysia and I asked her help in picking a recipe. She suggested couple of dishes that required procuring ingredients typical to Malaysia. Then I asked her Malaysian curry recipe and she sent me the recipe and then even made it for us. I planned on clicking her curry, but it was all gone so quickly that I didn't get a chance to take pics.

Then I found another Malaysian curry recipe that was slightly different from my friend's version. I double checked with my friend and after getting her nod of approval, I made this curry with freshly made curry paste and coconut milk.

Malaysian Apam Balik (Crispy Malaysian Pancakes) -- Eggless Recipe

Day 2 of BM# 38 and today I've Malaysian sweet pancakes for you. Apam Balik is a crispy thin pancake that is usually filled with sweetened peanuts. These are usually sold at specialist roadside stalls throughout Malaysia.
Watch this video to see how expertly the guy makes apam balik. I especially like the technique he uses to take them off the pan.

Traditionally these pancakes are made in brass molds since brass distributes heat evenly and the metal itself is thick and heavy, so food does not scald that easily. This post has clear pictures of the brass molds used to make Apam Balik. I don't own brass pans and have no plans of buying them, so I used a nonstick pan to do the job. After looking all those gorgeous looking pancakes, mine didn't turn out as golden and crispy in the pictures, but they tasted great.
