Rainbow Birthday Party

We had a rainbow birthday party for A. Here was my dessert table.

Read about the surprise inside the cake here.

Extra little chocolate cupcakes just in case you didn't like white cake.

A cupcake stand filled with all sorts of candy and bigger cupcakes.

Read about how to make these rainbow sprinkled pretzels here.

Read how to make rainbow candy ca-bobs here.

Rainbow fruit skewers were the healthy alternative to all the sweets. Read more about it here.

Rainbow jello. Read how to make this 11 layered jello square here. In the back there was rainbow popcorn. Read all about it here.

It was definitely a colorful table with desserts for every kind of sweet tooth you may have. A. loved it and that is all that matters.

Rainbow Layered Jello

The most popular thing at the party was none other than this 11 layered rainbow jello treat.

11 layered Rainbow Jello Squares
6 packages JELLO (3oz each) -
strawberry, orange, lemon, lime, berry blue, and grape
8 1/2 envelopes KNOX unflavored gelatin
1 can of sweetened condensed milk (14 oz)

You can use any flavor that you wish. I chose the flavors based upon the color.

Here is what the Knox Gelatine looks like. Look on the top shelf of your grocery store.

Mix the can of condensed milk with 1 3/4 cup hot water. I microwaved the water in a pyrex cup for 3 minutes to get it to boil. Set aside.

Mix 2 1/2 envelopes Knox gelatine with 1 1/4 cup hot water

Combine with milk mixture and set aside

Combine Grape JELLO, 1 envelope Knox gelatine and 1-1/2 cups hot water. Cool, then pour into a 9×13 pyrex and a 10x10 pyrex square. Place in the freezer for 15 minutes or until firm. Now would be a great time to get your next layer (Blue Raspberry) ready so that it will be cool enough to pour over when ready.

Pour a layer of the milk mixture on top of the grape JELLO. I didn't measure out how much I poured, but just eye balled it. Freeze to set.

Next pour the blue layer and then prepare the green layer...

Pour the milk mixture over the blue layer ...followed by pouring the green layer while preparing the yellow layer...

...repeat, you get the idea... continue until you get to the last layer, the red layer.

Note: If the milk mixture starts to gel, I found that putting it in the microwave for 10 seconds liquifies it again, but doesn't make it overly warm to pour on top. When done, your layers look like this:

Pretty or what? ...and don't you say what.

Cut the jello into squares. Use your fingers to pull the jello from the edges and they should come right out.

Plate and serve.

The kiddos (me included) loved to peel each layer off and eat individually.

I absolutely loved how they turned out.

I definitely will make this recipe again.

Can't you see this with different colors for different holidays?

Caramel Popcorn

I attempted to make rainbow popcorn, but wasn't too successful.

Red and Green turned out great, but when I tried to mix colors for orange and blue, it made variations of red and green. Despite the difficulties in mixing colors, it turned out delicious so I will definitely make this popcorn again.

Caramel Popcorn

3 bags butters and salted popcorn, popped (remove any kernels) unpopped
3/4 cup butter
1 1/2 cups brown sugar
1/4 + 1/8 cup light corn syrup
1/4 + 1/8 teaspoons baking soda
1 teaspoon vanilla extract
food coloring

Preheat oven to 250 degrees Fahrenheit.

Pop 3 bags of popcorn. I used 2 1/2 to get it more caramelly (love my description?).

In a medium saucepan, melt together the butter, brown sugar, and corn syrup. Bring to a boil, sitting frequently.

Boil over low heat for five minutes. Remove from heat and add the baking soda and vanilla

Place each bag of popcorn in rimmed cookie sheet coated with cooking spray.

If you want to color the caramel, now would be the time to do so. Then, pour the caramel over the pan of popcorn. Toss to coat. Don't use your hands as it will be very hot!

Bake for 45 minutes, rotating pans and stirring each pan with a spatula coated with cooking spray every 15 minutes. This will allow the caramel to be evenly coated. Cool completely before serving.

This has definitely been a favorite since I have made it.

Rainbow Cake

Another rainbow cake...

but this time I took it one step further and made colored frosting in between each layer. Read how to make the layers here.

It was time consuming, but made a difference when the cake was cut.

Each slice was huge!

but pretty yummy.

Happy Birthday A!

Rainbow Fruit Skewers

I thought this would be a cute idea to display fruit at A.'s rainbow party.

Basically, you just have to gather your fruit and skew together.

Easy peesy and oh so delicious!

Rainbowed Pretzels

Here's a sweet and salty treat any kid would love, sprinkled covered pretzels.

All that is needed are some pretzel rods, almond bark or white chocolate and some of your favorite sprinkles.

Melt your almond bark and then coat half the pretzel.

Add your sprinkles. Let it harden and you are done.

A quick and simple treat to give or eat.

Can't wait to share this with the kids.
