Isomalt can be tricky to work with, expensive, nor is it easily available. Below, I have two recipes, how to make isomalt as well as its substitute. This simple and easy recipe uses sugar candy as a substitute for Isomalt gems. It makes a great treat for kids' cakes as kids can eat candy instead of isomalt. Sidney Galpern on Instagram: "Silicone mats are great- but not for this 💁‍♀️⬇️ 🔥 Don't get me wrong, silicone mats are an essential tool for working with sugar and isomalt, no questions asked! But although silicone mats are perfect for working and pulling isomalt, they're not the best for pouring isomalt onto. ❓️Why? Silicone has a tendency to wave and buckle from that much direct heat, causing the mat to become uneven and bowed, which is not ideal when you want a nice flat window cookie with evenly poured isomalt. ✨️ So what's the alternative? Try using a non-stick oven liner, or a piece of aluminum foil greased with a thin layer of cooking spray.
