INGREDIENTS:
- 2 cups jasmine rice (or long-grain rice of choice)
- 2 cups cooked gungo peas (aka pigeon peas)
- 2 cups coconut milk
- 1 cup water
- 1 tbsp coconut oil
- 2 garlic cloves, minced
- 1/2 tsp pimento seeds, crushed
- 1 tsp salt (or to taste)
- 2 tsp all-purpose seasoning
- 1 tsp brown sugar (optional)
- 1 scotch bonnet pepper
- 2 thyme sprigs
- 2 scallion
- 2 tbsp butter

*Once you add the rice, cover and cook on LOW for 30 minutes.*

Note: For jasmine, basmati, or parboiled rice, I use a ratio of 1.5 cups of liquid for 1 cup of rice.
