Why You Should Blanch Kale If you freeze fresh kale, it can become bitter over time. That’s why you need to give it a taste before adding it to your favorite recipe or you’ll end up ruining the flavor. Blanching kale is a lot better than freezing it right away as you’ll be able to preserve it for a long time. All you really need is a pot full of boiling water, ice water, and some time on your hands to store kale in your freezer for up to a year.
