Perfect for pairing with your favourite hot drink or enjoying on its own whenever the mood strikes. 💖 🍰 Coffee and Walnut Cake Inspired by Mary Berry Ingredients: For the cake: * 225g / 8 oz unsalted butter, softened (plus extra for greasing) * 225g / 8 oz caster sugar * 4 large eggs * 225g / 8 oz self-raising flour * ½ teaspoon baking powder * 1 tablespoon instant coffee dissolved in 1 tablespoon boiling water * 50g / 1.75 oz chopped walnuts For the buttercream: * 125g / 4.5 oz unsalted butter, softened * 225g / 8 oz icing sugar, sifted * 1 tablespoon instant coffee dissolved in 1 tablespoon boiling water * 8 walnut halves to decorate Directions: 1️⃣ Heat your oven to 180°C (160°C fan) / 350°F / gas mark 4. Butter two 20cm (8-inch) round cake tins and line the bases with parchment paper. 2️⃣ In a large bowl, cream together the butter and sugar until pale and fluffy. Add the eggs, flour, baking powder, and coffee mixture, mixing until fully combined. Fold in the chopped walnuts gently. 3️⃣ Spoon the batter evenly into the prepared tins and smooth the tops. Bake for about 25-28 minutes, until the cakes have risen and a skewer inserted in the centre comes out clean. 4️⃣ Allow the cakes to cool in their tins for 5 minutes before turning them out onto a wire rack to cool completely. 5️⃣ To make the buttercream, beat the softened butter until light and creamy. Gradually add the icing sugar, then stir in the coffee mixture and continue beating until smooth and spreadable. 6️⃣ Place one cake layer upside down on a serving plate and spread half of the buttercream over it.
