5 Simple Salad Dressings

With the weather finally warming up again this week I thought it was about time I blogged our favourite simple salad dressings. I don't usually buy pre-made dressings, other than mayonnaise, as they're pricey and I like to customise our salad dressings to our tastes.

All you need is some measuring spoons and a jam jar, no special equipment.  Once made the dressings will keep in the fridge for a couple of days in the jam jar, just give them a good shake before you use them.




Lemon Dressing


90ml/6 Tblsp oil

30ml/2 Tblsp lemon juice
salt and pepper to taste



Honey/Maple and Mustard Dressing

90ml/6 Tblsp oil
45ml/3 Tblsp white vinegar
1 Tblsp Dijon mustard
1 Tblsp honey or maple syrup
salt and pepper to taste


Balsamic Dressing

90ml/6 Tblsp oil
2 Tblsp balsamic vinegar
1 tsp lemon juice
salt and pepper to taste


French Dressing

1/2 clove garlic, minced or 1/2 tsp garlic powder
1 tsp Dijon mustard
30ml/2 Tblsp white vinegar or lemon juice
60ml/6 Tblsp oil
salt and pepper to taste


Yoghurt Dressing

5 Tblsp/75ml or 1/3 cup natural yoghurt (can use dairy free)
2 Tblsp/30ml white vinegar or lemon juice
15ml/1 Tblsp oil
salt and pepper to taste
1 or 2 Tblsp fresh herbs, finely chopped (optional)
1 clove garlic or 1 tsp garlic powder (optional)


To make any/all of the dressings above simply put all the ingredients into a jam jar, screw on the lid, and shake until completely combined.  Use immediately or store in the fridge, remembering to shake the jar again before using the dressing.




Our Family Meal Plan for week of 03/09/2018 - £60

We got through out Mother Hubbard week last week, and I took advantage of the empty fridge and freezer to thoroughly clean both and defrost the freezer.  I also cleaned our oven, because of a spillage, and it's still gleaming.  I loathe cleaning the oven, it's one of my least favourite jobs so a the suggestion of many friends I've purchased an oven liner to put on the bottom of our oven which should make spillage clean up much easier.

We're staying with the frugal theme with the Meal Plan this week as I'm bracing myself for the inevitable school trip letters the first couple of weeks back, and other unforeseen expenses that crop up once school starts.

It's back to routine for us towards the middle of this week, although 3yo doesn't start back at Nursery until next Monday.  The holidays have seemed rather long and all of my children are welcoming the prospect of getting back to routine and starting the new school and college year.

Our apple tree still has enough fruit to keep us going this week, and we've been blackberry picking again too.  We've rhubarb, fresh herbs, chard and rocket from the back garden. The weather is still fairly warn so the garden is still giving us plenty of produce, the apple tree will probably not have fruit left by next week though.

Breakfasts will be overnight oats, granola with yoghurt and fruit, or porridge and weekend breakfasts will be pancakes and bacon butties.

Packed lunches will be Quinoa and Pearl Barley Salad, cooked pearl barley and quinoa mixed with diced celery, peppers, cucumber, grated carrots, and chopped fresh herbs with a garlic yoghurt drizzle.  There'll of course be a piece of fruit and baked treat for afters.  Weekend lunches will be Bean and Rice Burritos and Homemade Pizzas.

Snacks will be popcorn, homemade biscuits, homemade toasted teacakes and English Muffins

Chana Masala



Mejadra (Middle Eastern Lentils and Rice) with wilted greens, pita breads (homemade), and yoghurt sauce.

OUR FAMILY MEAL PLAN FOR WEEK OF 06/08/18 - £72

It's the third week of the holidays and I'm looking forward to a couple of hours by myself this week.  It's been 15 days since I had any 'me time' apart from time spent working.  My husband is working a half day from home so he can spend time with 3yo in the morning and I'll be taking our middle two to a pottery taster class, which will give me 2 hours to myself whilst they have fun.  Our eldest will be helping in a local coffee shop as she does most mornings, and some afternoons.

We'll probably go to the local park a few times this week, especially as there's cooler weather forecast, and also visit the library and perhaps a free museum workshop.  We're very lucky that there are so many fab museums in town, many offering free holiday workshops.

Our garden is still providing us with salad greens, chard, spinach, fresh herbs, strawberries, raspberries and apples.  I'm going to have to use up lots of apples in baking and we'll be eating plenty as snacks because the tree is fully laden at the moment.  I'll also be giving apples to any friends and neighbours who fancy some. 

I'll of course be baking.  There will probably be a batch or two of scones, some flapjacks, muffins, and perhaps some biscuits/cookies.  Snacks will be homemade vegetable chips, popcorn, fresh fruit, and baking.

Breakfasts will be cereal or granola with fruit and milk, or toast and spread with a piece of fruit for afters.  Weekend breakfasts will be pancakes and crumpets.

Lunches will be accompanied by crudites and dip (hummus, herbed yoghurt, salsa).  We'll be having Cheese and Vegetable Puffs, Super Quick Couscous and Chickpea Salad, Versatile and Thrifty Flatbreads, Salmon and Couscous Salad, Chickpea Patties on homemade rolls with salad.  We'll have the flatbreads and couscous and chickpea salad twice.

Salmon and Couscous Salad

350ml vegetable stock, boiling hot
300g couscous
juice of a lemon
1 Tblsp oil
400g tin salmon, drained
1 chilli, deseeded and very finely diced (optional)
500g frozen mixed vegetables, cooked
large handful of parsley, finely chopped
handfuls of salad greens, to serve

Add the stock and couscous to a large bowl, mix until combined then cover with a plate or cling film and leave to sit for 10 minutes.  Use a fork to fluff up the couscous then mix through all the other ingredients.  Serve atop a handful of salad greens.


Chickpea and Sweetcorn Patties

400g tin chickpeas, drained
325g tin sweetcorn, drained
1 tsp onion powder
1 tsp smoked paprika
1 Tblsp lemon juice
2 Tblsp gram flour or cornflour
2 Tblsp rapeseed oil

Tip the chickpeas into a bowl and crush to a thick paste with a potato masher. Stir in the sweetcorn, onion powder, smoked paprika, lemon juice and plenty of salt and black pepper.

Add the gram/corn flour and mix well until everything starts to stick together. Divide the mixture into four, then form each quarter into a burger shape.

Brush the burgers lightly with oil and place on the barbecue or griddle. Cook on each side for 2 minutes, until crisp and hot through. Serve in buns or on sandwiches with salad fillings and sauces of your choice.

Dinners

Veggie Curry Filo Parcels

1 small sweet potato, diced
1 tsp canola oil
1 onion, finely diced
1 Tbsp curry powder
2 cloves garlic, crushed
1 can lentils, drained and rinsed
2 Tbsp sultanas
1 Tbsp lemon juice
1 tsp sugar
12 filo sheets
1 egg, lightly beaten
1 Tbsp sesame seeds

Preheat your oven to 200°C.  Put the sweet potato into a saucepan, cover with water, bring to the boil then simmer until the sweet potato is tender.  Drain and set aside.

Over a medium heat, in a large frying, gently soften the diced onion in the oil.  Add the curry powder and garlic and cook for a minute or two.  Add the lentils, cooked sweet potato, sultanas, ¼ cup/60ml/4 Tblsp water, lemon juice and sugar.  Cook gently until most of the water has evaporated then take off the heat and allow to cool to room temperature.

Lay one sheet of filo on your bench. Place ¼ cup/4 tablespoons of filling towards the short edge of the filo rectangle.  Spread out a little. Fold the long edges toward the middle, covering some of the filling.  Roll the filo into a cylinder shape like a spring roll.   Repeat until all the filo and filling have been used.

Place on a baking tray lined with foil or baking paper.   Brush with oil then bake, or brush with beaten egg and sprinkle with sesame seeds then bake.  Bake the filo parcels in your preheated oven for approximately 25 minutes or until golden brown and crispy.


Roast chicken with roast vegetables


Chicken Fried Rice

2 cups long grain rice
600ml water
4 eggs, lightly beaten
1 Tblsp/15ml oil
1 onion, finely diced
1kg mixed frozen vegetables
500g leftover cooked chicken, shredded
3 Tblsp/45ml soy sauce

Rinse the rice under cold running water until the water runs clear.  In a saucepan cover the rice with the water and bring to the boil with the lid on.  Reduce the heat to the lowest setting and cook for 20 minutes or until the water has been absorbed and the rice is cooked. Remove the saucepan from the heat and allow the rice to cool.

Put a wok or large frying pan over a moderately high heat and add the oil.  Add the onion and vegetables. Stir-fry until nearly cooked then add the cooked rice and chicken.  Make sure the rice and chicken are heated through and piping hot.  Move the rice and vegetable mixture to one side of the wok or pan and tip in the beaten eggs, cooking until scrambled.  Mix the scrambled egg through the rice mixture.  Stir through the soy sauce then serve.

OUR FAMILY MEAL PLAN FOR WEEK OF 09/07/18 - £71

The heatwave is finally showing signs of letting up, but only for a couple of days midweek.  I'm really not enjoying endless days of 28C and over.  This week is the second to last week of school for the year which means there's lots of events and activities to remember, the calendar looks rather full.  

We're doing our best to keep cool and hydrated, resting as much as possible when we can as the heat tends to sap all of our energy.  Cooking will be as minimal as I can get away with this week, it's just been too hot to want to spend much time in our kitchen.  It's been over 30C in there without even turning on the oven.

I'll be baking our burger buns, and making the wraps for lunches despite the heat.  We've got an abundance of lettuces, fresh herbs, and assorted greens ready to be harvested from our garden along with loads of strawberries and raspberries so I've not included those in the grocery list.

Breakfasts this week will be cereal with milk and fruit again.  On the weekend we'll probably have pancakes and crumpets.


Packed lunches will be falafel wraps with crudites, a baked treat, and fresh fruit salad.  Weekend lunches will be Weekend lunches will be Homemade Pizzas with coleslaw on Saturday and Traffic Light Rice and Beans on Sunday.



Dinners

Rice and Vegetable Bake with salad greens - Meatfree Monday


 Fish Wraps with Asian Coleslaw

200g vermicelli noodles
1/2 white cabbage, finely shredded
1/3 red cabbage, finely shredded
3 carrots, cut into thin matchsticks (optional)
6 spring onions, finely sliced
large handful of fresh mint, roughly chopped
1 chilli, deseeded and very finely diced
handful of roasted nuts (optional)

Dressing:
2 cloves garlic, minced
2 Tblsp soy sauce
1 Tblsp sugar
3 - 4 Tblsp lime juice

Combine all the dressing ingredients in a jar and shake until completely combined.  Set aside for the flavours to develop whilst you make the salad.  Put the noodles into a bowl and cover with boiling water.  Leave for 3 - 5 minutes or until tender.  Drain and rinse thoroughly with cold water. 

Put the prepared vegetables in a bowl, add the noodles and toss to combine.  Pour over the dressing then gently mix through the salad.  Serve immediately.  We're having ours in wraps with grilled white fish.



Gnocchi and Mixed Vegetable Bake

1kg gnocchi
500g frozen mixed vegetables
2 cloves garlic, minced
handful of fresh mint or parsley, finely chopped
600ml full fat creme fraiche
100g Parmesan or hard cheese, finely grated

Put a large pot of water on to boil.  Add the gnocchi and frozen mixed vegetables then boil for 3 minutes or so until all the gnocchi have floated to the surface.  Drain well then mix through the garlic, herbs, and creme fraiche.  Pour into an oven proof dish, ours is 2.5 litre capacity, and top with the grated cheese.  Bake for 20 - 25 minutes then serve with a side salad.
