French Apple Cake


Cake is fresh and warm as I’m writing this, again with the phone.
I’m excited to share this recipe with you all.

During MCO, I prepare tea time daily, because we have early lunch. And whatever that’s left from tea, the kids will eat as supper. They are growing up now and they eat a lot :-)
My kids don’t eat the same cakes. And this cake pleases my eldest, but my Second kid won’t touch it.
So, I will bake things they like on rotation. Very few of my bakes pleases every kid in the house. They just don’t have the same taste buds.

Chocolate Ombre Butter Cake (with video)



This cake was a random idea that popped in my head one fine day.....
Some weeks later, I made it, shared it on Facebook.... and made it again for my kids' children's day in school.

The layering for my latter attempt wasn't as good, maybe because I put it too low in the oven, hence, the layers curved up. So, in order for you to get a better looking cake than me, I suggest that you bake it on the middle rack instead of the lower rack.

Durian Cheesecake



My second daughter Lyanne is a durian monster. She's a very picky girl who loves plain rice and anything carbo but hates meat and vegetables. She isn't an adventurous eater but surprisingly, she loves durian. Love is an understatement. She's mad about durians. Durians aren't available all the time and when it's durian season, she will be pestering her grandpa to get her durians and he will gladly scour the town and get her the best that he can find.

Sticky Date Pudding with Cinnamon Butterscotch Sauce




I used to think this doesn't sound delicious.
I used to think dates in cakes sound soggy.
I used to think cake like puddings to be weird.

It was after Eid-ul Fitr and dates were on sale. Very very cheap!
Each year, muslims will consume dates during the fasting month of Ramadan and once Syawal approaches... the dates goes on clearance sale.. and it goes cheaper and cheaper as the days go by.

Chocolate Sponge Cups



My kids bring food for school recess almost everyday. They prefer homemade and homecooked food rather than eating canteen food.

I made these one fine afternoon and my kids raved about them. It's the first time I'm recording this attempt down as I always make them without a fixed recipe. I just put in whatever I feel like putting.

Torch Ginger Chiffon Cake




First of all, I know it sounds weird. Very weird to use Torch Ginger in a chiffon cake.

Few weeks back, I was in Taiwan, and I had my taste of ginger flower in a chiffon cake in Neiwan, Hsinchu. The flower I tasted was Hedychium coronarium known as 野姜花, and it's a type of ginger not found here. Maybe not that I know of, maybe some people do plant them in Malaysia, but I've just never seen it myself.

Victoria Sponge


Cake baked in 2014

To us Malaysians, sponge cake will be soft, cottony and airy with not much oil in the cake..but this cake will resemble to us.. a pound cake, where all measurements are equal, and it's sweet and buttery, not a bit like the sponge cakes we are used to.

Victoria Sponge is a classic English cake, is also known as Victoria Sandwich. It was named after Queen Victoria. Two layers of buttery cake sandwiching a layer of cream and jam.

Strawberry Buttercream Cake


Light and refreshing. Everybody loved this cake.

I like to make flavoured buttercreams by using the cooked buttercream method because I can incorporate flavours without worrying about making the buttercream way too runny.

Cooked buttercream is also lighter in taste but it is not as stable as meringue based buttercream. 
Just keep this cake well chilled, and it will be alright.

Strawberry Cream Castle Cake



Two years back, my 4yo niece Arianna requested for a Castle Cake.

A castle cake!! Woohoo!! I've been wanting to make one for the longest of time, but both my girls never agreed to have one. I just don't understand why they won't want a castle cake. And my other nieces too, they didn't want one too.

It was quite a big project for me. I had to plan the execution properly. I didn't want to use fondant, or use plastic parts on it, and tried my best not to use food colouring to make this cake. The colouring on sprinkles were inevitable.

Dundee Cake


Dundee cake is a traditional cake from Dundee, Scotland. Traditionally, it should contain sultanas, Seville orange peel and decorated with almonds. But as time goes by, people tend to change the ingredients to their liking. I find most modern Dundee cake recipes not much different from other fruit cake recipes, other than the almonds on top. The original Dundee cake does not contain any cherries or currants, or any mix peel, but specifically Seville orange peel for that bitter orange tinge and sultanas, just sultanas.

Painted Cute Bunny Birthday Cake

There are people who don't like eating cream, who will tend to have the habit of scraping off cream whenever they eat cake.To us bakers, sometimes, that could be quite annoying, especially when we use premium ingredients to frost the cake, and before they even taste it, it is scraped away and discarded in the paper plate.

But yet, a birthday cake for a kid, needs to look like a birthday cake for a kid.

My MIL was around and will be flying off two days before her actual birthday. So, I made a 'less-cream' cake to suit the taste buds of the elderly family members. I brought the cake over to my in law's that night.

Strawberry Doughnut Cake




Two years ago, Lydia asked for a Doughnut cake on her 7th birthday.
Pink doughnut with sprinkles....
I made the cake earlier in the day. Did the strawberry syrup and reheated it to complete the glaze at night.

The only food colouring on this cake came with the sprinkles.

Passionfruit Drizzle Yogurt Cake


I had some passionfruit, harvested from my garden, frozen for a year.
They still looked and tasted fine after being mummified in my freezer for that long.
It became a cake that was well loved by my family.

I had been keeping this post drafted for very long, and since this month's Bake Along's theme is Bundt Cake, I think I better dig it out and make myself be less lazy and blog. Sadly, this will be their last theme too. I rarely participate because I can't quite keep up, not even with a month's notice. This cake was baked in a Savarin pan, not quite a bundt, as a bundt cake needs to have fluted sides.

I adapted my Orange Yogurt Muffin Cake recipe into a passionfruit one, and I used one extra egg... of which was not a good decision. My cake's side curved in a bit, but the cake was really tender.

Princess Belle Doll Cake with Mango

My 2nd girl, Lyanne was once crazy about all things yellow... and that makes Belle her favourite Disney Princess.

Back in 2013, I made her this cake to celebrate her 5th Birthday.

I do try my best to make cakes without food colouring and the best way to make a yellow princess cake, is to use mango. And the mango slices made a nice frilly dress..... I love the outcome of this cake.

Banana Chiffon Cake with Cocoa Layering


3rd attempt


I experimented 3 times to get the right texture for me, with some height. So, my colleagues became my guinea pigs, of which they didn't mind. Bakes with bananas are always greatly welcomed.

I have a colleague who was pregnant at that time, and she loved this so much. It's been almost a year since she last ate a piece of this, and she still tells me she missed this.

Ants' Nest Cake ~ Kek Sarang Semut



I first had a piece of this, not too long ago, maybe 5 years back? And I was smitten by the taste and texture. My SIL baked it for the 2nd time and I asked her if she put in any cocoa powder, because it felt like I was eating a bouncy chewy chocolate cake. She said no, it’s just caramel. I was totally taken by surprise.

Then 3 years ago, I had this sudden “want” to bake this cake and eat it too, I asked my SIL for the recipe. She actually got this recipe from a fellow church friend Mrs Elaine Wong. My SIL was smitten by Elaine’s cake and that got her to request for the recipe. The love bug for this spreads....

Sweet Vanilla Cake



I call this Sweet Vanilla Cake as it looked sweet to me... sweet feeling, not sweet tasting.

I saw my friends making Korean Style Flower Buttercream deco and they were so pretty. I can't pipe like that, and so when I saw these fresh edible flowers in Cold Storage Sunway Pyramid, I quickly bought them. I planned to make a cake once I get home few days later.

Black and White Raspberry Slice


I found one place selling raspberries cheaper than most places by about 30% and so, how could I resist but get one punnet. I made this on impulse after googling for something to do on a Sunday afternoon.

When the kids heard I was in the kitchen doing something, they ran in. Each asking me if they can help. With this being an easy bake, I agreed to let them help, all 3 of them. Lydia did the sifting and cream cheese mixture and Lyanne mixed the wet ingredients and helped with the final mixing. Not forgetting my boy with the raspberries. It was fun and enjoyable.

Blueberry Double Cheesecake



Long long ago.... I saw this cheesecake on My Kitchen. That's where the inspiration came from.

My kids dubbed this as their all time fav cheesecake. I told them, it's very expensive to make, LOL.

I made this two years ago, sorry yeah.. was too busy with MFF and AFF that all that I'm sharing now are all old recipes. I'm digging them out each week.
