Spicy Coconut Rice
Saute onion and garlic in oil. Add cumin, coriander, red chilli, lemongrass and salt and stir well.
Add rice and stir until thoroughly mixed. Add lime leaves and shrimp paste.
Add coconut milk and bring to boil, allowing to simmer until all liquid is absorbed. Then, cover, reduce heat and cook for 15 mins more.
Garnish with handful of chopped peanuts.
