Once a high-ranking cheese for many dairy lovers, Swiss seems to be waning in popularity at the same time as artisanal cheeses have been on the up and up. We understand the appeal of artisanal cheese (Mt. Tam!). But, no matter how fanatical you are about your clothbound cheddar, don't dis the Swiss.
