After graduating from high school in his hometown in 1985, he began studying medicine and history at the University of Hamburg. While studying, Pilawa worked in an Israeli kibbutz for a year. As early as 1987, Pilawa began working as a presenter for Radio RSH, where he remained until 1994. In 1994, Pilawa switched to television to present the program "2 against 2" for PRO7. In 1996, Pilawa was hired by Sat.1, for which he initially produced the programs "Hast Du Wort?!" and "The Golden Egg", then also moderated "ran". In 1997, Pilawa took over the moderation of "Truth or Untrue" for the same station. From 1998 he was also seen there with his talk show "Jörg Pilawa".

In 2000 he took over the moderation of the "Quiz Show" for the private broadcaster. In 2001, the presenter moved to public broadcasters, where from July 2001 he presented the program "Das Quiz" with prominent candidates four times a week on the ARD's evening program. In October of the same year, his Saturday evening show "Rekordfieber" began broadcasting, during which bizarre records were set using extraordinary ideas.

The Thursday evening show "Star Quiz with Jörg Pilawa" started in November 2002. In the first half of 2003, the music show "Germany's Greatest Hits" was added. Meanwhile, Pilawa supports the humanitarian organization Doctors Without Borders. In a representative survey by the magazine "TV Today" about the most popular show presenters, the German television audience placed Pilawa in third place on the popularity scale in July 2003, where he had to give way to Günther Jauch and Thomas Gottschalk. In addition to moderating the "Quiz", the "NDR Talkshow" and "Herzblatt" on ARD, from November 2004 he also hosted the series show "Haus Visit - Stars under Pressure". Due to this additional burden, Pilawa also announced that it would forego one of its three older programs from 2005.

In February 2005, ARD consequently announced that it wanted to cancel the flirt series "Herzblatt" due to declining ratings. At the Golden Camera awards ceremony in February 2006, Jörg Pilawa was honored in the "Best Television Entertainment" category.

Jörg Pilawa has been married to Irina Opaschowski since 2006. They have a son and a daughter together. The family lives in Hamburg.
