Other than remastering in HD, the Playstation 3 also offers trophy support that players can earn by accomplishing certain tasks, some simple, others difficult. Also each of them offers something different from their original releases.
For Kingdom Hearts 358/2 Days, instead of a full re-release (as it would have required a full remake to update the graphics), a full HD cinematic with new voice scenes that lasts around 2 hours and 55 minutes, by both using the original cutscenes remastered in HD and creating new cutscenes based on scenes that were silent with only worded dialogue in the original Nintendo DS release. Also most of the Roxa's Dairy and Secret Report entries from the original game are preserved while the new Character Files which details all the major characters in this game, replaces the Enemy Profiles from the original game.
For Kingdom Hearts Final Mix, other than enabling for non-Japanese players to officially play this game and experience the original updates, a few new updates were also added in. First a few features originally introduced in Kingdom Hearts II were added in, like the Reaction Command system which now control the command sensitive texts that were originally the fourth option in the battle menu. This makes it easier for player to use them, especially during battle, and makes it easier to use the summon and special attack commands as well. In it's place, the Summon/Dismiss command that was originally in the Magic option has been placed as the fourth command. Also like in KHII, cutscenes can be skipped and the right analog stick controls the camera. One final major change is that Combo Master from Kingdom Hearts II and EXP Zero from Kingdom Hearts II Final Mix have been added in. EXP Zero in particular is limited to only Proud Mode, allows for the more skilled players to prevent Sora from leveling up and enable him to fight at LV 1 only. It is also noteworthy that while the original Japanese version of Final Mix was an updated version of the English release that used subtitles due to the difference in audio, the HD re-release uses the audio from the Japanese version of the original release, including using the archived audio from other scenes for Sora's encounter with Unknown.
For Re:Chain of Memories the only major change has to do with the special collection bonuses. This consists of 6 attack cards and 6 of the enemy cards (excluding Zexion) that did not exist in the original Gameboy Advance Chain of Memories game. In the original PS2 release, either completing both Sora and Riku's game or for Japanese players only, having a completed game of KHII Final Mix on a PS2 Memory Card was the method to unlock these so they could be collected individually. For this version completing 358/2 Days and unlocking the wallpaper for the PS3 background (by getting all of its trophies which also includes looking at all their data files) is now the new requirement and can be done as early as possible. Also while the original game the 6 attack cards are based off of 6 of the Keyblades from KHII, in the re-release 4 of these are replaced with Keyblades from 358/2 Days.

Yes, only the new cutscenes that weren't part of the original Nintendo DS version of Kingdom Hearts 358/2 Days were created specifically for the HD remake. The scenes of Sora and Goofy's lines during the confrontation with Unknown which is exclusive to Kingdom Hearts Final Mix does not really count however, as it is actually spliced audio footage taken from Sora's conversation with Leon and Yuffie, and Goofy and Donald's conversation with Aerith during the first visit to Traverse Town.
