Prince Edmund is the very first of what will become the Blackadder family. He is a member of the Plantaganet royal family and assumes the moniker of 'The Black Adder'. Presumably at some point before the second series, one of his descendents took the nickname and used it as his surname, thus creating the Blackadder family.
At this point in history surnames wouldn't be that common, anyway he would be called Edmund Plantagenet.
