Finn didn't learn to fly. He operates a skim speeder, which is a unique form of land speeder. Land speeders are the Star Wars equivalent of a car. Ships that fly in the atmosphere (such as Luke's T-16 Skyhopper or the various speeders seen on Coruscant) and in space are an entirely different vehicle which Finn isn't capable of operating.
Snoke orders Hux to leave the base and return to him with Kylo Ren. Its possible that Hux passed by the catwalk when looking for Ren and picked up the helmet. Likewise it's possible Ren returned for his helmet on his way to a transport off of Starkiller.
The film takes place in 34 ABY (After the Battle of Yavin). Only a short time after The Force Awakens.
No. The title is intentionally ambiguous, as Jedi is both singular and plural. As stated in the opening crawl of The Force Awakens, Luke Skywalker is the last Jedi. TLJ Director, Rian Johnson has also confirmed this in interviews and via Twitter. In the first trailer for this film, Luke is heard saying "I only know one truth; it's time for the Jedi to end.", which could mean he refuses to train Rey to become a Jedi but may still train her in the use of the force, which would make Luke the literal last Jedi. However, if Luke trains Rey to be a Jedi, then they would both be the last.
From episode 9 the title is in plural: Luke, Leia and Rey could be considered the Last Jedi (though Leia officially never ended her training) eventually Rey being the only Jedi still alive and capable of renewing the Jedi Order (or not).
