Companies like NoPalm Ingredients are rethinking how we produce fats altogether. Instead of relying on land-intensive monocultures, they’re turning to microbial fermentation, using naturally occurring yeasts to create sustainable fats from agri-food side-streams such as potato peels or whey permeate.
