Chapter 1

THE PROBLEM AND ITS SCOPE

Rationale

Squash is a rich source of vitamin A that is good for normal vision, the

immune system, and reproduction. Vitamin A also helps the heart, lungs,

kidneys, and other organs work properly. A squash is a vegetable protected

by a rind. This vegetable belongs to one of the four species of Cucurbita as

summer or winter squashes both summer and winter squashes are full of

nutrients containing trace amounts of B vitamins and healthy doses of iron,

calcium, magnesium and potassium while its rinds contains beta-carotene.

Squash is a staple food for many weight-loss regimens because of its

potential health benefits.

According to F.A.O (2006) summer squash are the edible immature

fruits of Cucurbita pepo L., a highly diverse species of the gourd family,

Cucurbitaceae. Summer squash are easy-to-grow, short-season crop best

adapted to temperature and subtropical regions. In the new world tropics,

some Cucurbita moschata Duchesne are grown for their edible immature

fruits. Some Cucurbita maxima Duchesne are also grown for this purpose in

South America. Over 1,000,000 hectares of pumpkins, squash, and gourds

are harvested annually with a total yield of nearly 19,000,000 tonnes.

The mentioned product will be beneficial to its makers and consumers.

Students are the researchers target consumers, especially to those who


believe that vegetables are unappealing and most of the students prefer

desserts than vegetables, that is why this study has been proposed to

determine the feasibility of Cheesy Squash (Cucurbita maxima) Balls.

Setting

Dalaguete is the vegetable basket of the province of Cebu. It is located

in Mantalongon,it is nabel of vegetable trades in the Philippines. One of the

vegetables here is squash. This vegetable will be sold in Dalaguete Public

Market and in Carbon, Cebu.

Degree of Seriousness

Some of the many additives included in processed foods are thought to

have the ability to compromise the body's structure and function and are

suggested to be related to the development of skin, pulmonary and psycho-

behavioral conditions. Butylated hydroxytoluene (BHT) and butylated

hydroxyanisole (BHA) are currently being investigated for their potential to

damage genetic material and therefore promote cancer. Sulfites have been

found to aggravate asthma (hypertext) in certain children and adults.

Artificial colorings have been noted to cause hypersensitivity reactions in

sensitive persons promoting conditions such as ADHD (attention-deficit-

hyperactivity disorder), asthma and skin conditions such as urticaria and

atopic dermatitis. Therefore, avoiding foods that contain these and other

chemical additives may greatly contribute to health. Squash can be used as

Cheesy Squash (Cucurbita maxima) Balls it is cheaper compared to canned

goods and poultry products.
