         In a large bowl, whisk together the flour, sugar, baking powder, salt, and

    2. Using a pastry cutter or other mixing utensil, mix the shortening into the dry
       ingredients. Once fully incorporated the mixture should be crumbly.
    3. Store in a large airtight container in the pantry or on the counter for up to 3
       months.

Instructions
Measure flour into quart size mason jar.
      1.    Add sugar on top, then baking powder, then salt. Place lid on jar. (My
            ingredients JUST fit)
When Ready to Prepare Cake Batter
      1.    Place softened butter into stand mixer and mix on medium for 1-2
            minutes.
 2.       Place dry ingredients into stand mixer and combine with butter for 30
          seconds.
 3.       Add milk, oil, vanilla and eggs and mix on medium-high for one minute.
 4.       Pour batter into prepared pans. Bake at 350°F. For 8-inch pans it's 20-25
          minutes. For cupcakes start checking around 15 minutes. To make in a
          9×13, bake for 30-38 minutes. Cool before frosting.
Ingredients
Yellow Cake
           ½ cup (1 stick or 113g) butter, softened
           1 ½ cups (300g) granulated sugar
           1 ¼ cups (307g) whole milk
           ⅛ cup vegetable oil
           1 tablespoon vanilla extract
           3 large eggs, room temperature
           2 ¼ cups (281g) all-purpose flour, sifted
           3 ½ teaspoons baking powder
           1 teaspoon kosher salt, if using table salt use ½ tsp
Chocolate Frosting
           1 ½ cups (3 sticks or 340g) butter, room temperature
           4 cups (500g) confectioners sugar
           ¾ cup (94g) unsweetened cocoa powder
           4 tablespoon (60ml) heavy whipping cream
           2 teaspoons (10ml) vanilla extract
           ⅛ teaspoon kosher salt
Instructions
    Yellow Cake
        1. Place softened butter and granulated sugar into stand mixer fitted with the paddle
           attachment and mix on medium for 1-2 minutes.
        2. Add milk, oil, vanilla, and eggs and mix on medium for one minute or until
           ingredients are fully incorporated.
        3. Place dry ingredients into stand mixer and mix on low until fully combined about 1
           minute.
        4. Pour batter into prepared pans 8-inch round cake pans. Bake at 350°F for 18-25
           minutes. Remove from oven and let cool in pan for about 5 minutes, then turn out
           onto a cooling rack for at least 30 minutes. Cool completely before frosting.
    Chocolate Frosting
        1.   In the bowl of an electric stand mixer, fitted with whisk attachment whisk butter and
             sugar on medium-high speed until very pale and fluffy or about five minutes.
        2.   Be sure to stop at least once and scrape the bowl.
        3.   With the mixer off, add cocoa powder, vanilla, and salt.
        4.   Turn mixer on low and blend for about 30 seconds.
        5.   One tablespoon at a time, add in heavy cream.
        6.   Once all cream has been added and the mixture is mostly combined, turn off the
             mixer and scrape down the sides of the bowl.
        7.   Now turn the mixer onto medium-high to high and whisk for 3-5 minutes or until
             mixture is lighter and fluffier. The frosting will be shiny and seem to have many large
             air bubbles throughout and this is exactly what we are going for. (You can smooth
             those out on the cake if so desired.)
    Ingredients in Homemade Cake Mix
   cake flour (don’t use all purpose flour)
   sugar
   baking powder
   salt
   vegetable shortening (don’t use vegetable oil)
    How Long Does Homemade Cake Mix Last?
    If you store this cake mix in an air-tight container, it should last 10-12 weeks. Make sure to
    store it in a cool, dry place. If you bake the cake, you can freeze it for up to three months. The
    best way to freeze a cake is to freeze the layers separately. Wrap each cake layer in plastic
    wrap and then in aluminum foil. Then, using a permanent marker, label the cake type and the
    date you put the cake in the freezer. When you are ready to serve, remove the cake from the
    wrap and frost while frozen. Then let thaw for about 30 minutes to an hour.
    Recipes to Make with Your Cake Mix
    I wanted to share four things you can make with this cake mix – a vanilla cake, a chocolate
    cake, a Sunny Yellow cake, and a cobbler. The Sunny Yellow cake recipe is in the recipe
    card at the bottom of the post, and I’ll list the other three below. Feel free to take these
    recipes and make them your own. If you make something amazing, let us know in the

    Vanilla Cake
   3 ⅓ cups Homemade Cake Mix

   3 egg whites
   1 teaspoon vanilla extract
   Frosting, as desired
   Combine Homemade Cake Mix and milk.
   Whisk until well mixed.
   Add egg whites and vanilla. Whisk until well combined.
   Pour into two greased, 8-inch cake pans or one greased 9×13 pan. Bake at 375 for 20-25 minutes, or
    until a toothpick inserted into the middle of the cake comes out clean.
   Let cakes cool and then frost as desired.
    Chocolate Cake
   3 ⅓ cups Homemade Cake Mix
   9 tablespoons cocoa
   1 cup milk
   2 whole eggs, well-beaten
   2 ½ tablespoons butter, melted
   Frosting, as desired
   Combine Homemade Cake Mix and cocoa powder. Stir until well mixed.
   Add milk ½ cup at a time. Stir until well combined between each ½ cup.
   Add eggs and melted butter. Stir until well combined.
   Pour cake batter into two greased, 8-inch cake pans or one greased 9×13 pan. Bake at 375 for 25-30
    minutes, or until a toothpick inserted into the middle of the cake comes out clean.
   Let cakes cool and then frost as desired.
    Cobbler
   2 (21 oz) cans of pie filling
   3 ⅓ cups cake mix
   1 cup butter, melted
   Pour pie filling into a 9×13 pan. Sprinkle Homemade Cake Mix over the pie filling.
   Drizzle melted butter over the top of the cake mix.
   Bake at 350 for 45 minutes, or until topping is golden brown.
   Serve immediately with ice cream, if desired.
Sunny Yellow Cake with Orange Blossom Frosting
For this post I decided to make the Sunny Yellow Cake. I love the bright, citrus flavors of this
cake. The cake itself is flavored with lemon extract and the frosting has orange zest and
orange juice. Each bite is just bursting with flavor! I decorated with orange slices, clementine
slices, and chamomile flowers.

Is it cheaper to buy box cake mix or make from scratch?
It’s slightly cheaper to use the store bought mix, but the homemade mix is fairly easy to make
especially in large batches, and also tastes a bit better than the store bought. So it’s really up
to you as far as which you’d prefer.
What kind of cake can I make with homemade cake mix?
This cake mix can be used as a homemade vanilla cake mix, white cake mix, yellow cake
mix, chocolate cake mix, birthday cake mix, or whatever kind of cake you’d like. You can
even use it to bake cupcakes or cake mix cookies, it’s really up to your own imagination!
How should I store my cake mix?
This cake mix is made of all dry ingredients, so all you need to do is store it in some kind of
container with a lid, like a mason jar or tupperware, and keep it in a cool dry place. It should
last about 10-12 weeks.
Can I make cupcakes from this recipe?
Yes, just pick which cake base you prefer and fill cupcake liners ¾ full. Reduce baking time

   Cut in shortening using a fork, a pastry cutter, or your fingers. Store in an airtight container for 10-12
    weeks.
    For Sunny Yellow Cake
   Combine Homemade Cake Mix and milk. Whisk until well combined.
   Add eggs and lemon extract. Stir until well combined.
   Pour into two greased, 8-inch cake pans or one greased 9×13 pan. Bake at 375 for 25-30 minutes, or

                I have used this recipe and it turned out perfect! Soft, moist and tasteful. Even
   the days after. I made 1/2 of the recipe. Do I need to mix combine lump free? Also I want to
   add more flavors. Can I use f.e. use freeze dried strawberry?

   I’ve tried using this mix a few times for cupcakes and so far, I haven’t had anything turn out
   right. Every batch of cupcakes have made sunk.
   I’ve adjusted cook times and temps, mixing by hand/hand mixer, more/less baking powder,
   adding butter.

   If you use butter, you won’t be able to store the cake mix at room temperature. Shortening
   keeps the shelf life long and we think the cakes come out perfectly moist!

   Lots of questions! I love it!
   1 – For (4) 8-inch square cakes, I think you would need a double batch of the vanilla cake
   recipe listed above.
   2 – Most cake pans are about 2 inches deep.
   3 – Yes! It can store in the fridge for about 3 months.
   4 – For a spice cake, I think you could just add 2-3 teaspoons of pumpkin pie spice to the
   cake mix and then bake as normal for the Vanilla Cake.
