Mutton Rogan Josh is a classic dish from the Kashmiri cuisine, known for its aromatic and

richly spiced gravy. The dish is characterized by its vibrant red color, traditionally achieved

with ratan jot (alkanet root) or Kashmiri red chili powder. Here’s how you can make Mutton

Rogan Josh at home.

Ingredients:
● 500g mutton (preferably with bones, cut into pieces)
● 2 cups water
● 1 cup yogurt, whisked
● 4 tablespoons mustard oil (or any cooking oil)
● 1 teaspoon fennel powder
● 1/2 teaspoon ginger powder
● 2 teaspoons Kashmiri red chili powder (adjust to taste)
● 1/2 teaspoon turmeric powder
● 2 bay leaves
● 4-5 cloves
● 3-4 cardamom pods
● 2 cinnamon sticks (about 1-inch each)
● 1 teaspoon cumin seeds
● 1 large onion, finely chopped
● 1 tablespoon garlic paste
● 1 tablespoon ginger paste
● Salt, to taste
● A pinch of asafoetida (hing) - optional
● Fresh cilantro (coriander leaves) for garnish

Instructions:
​ Prep the Mutton:
● Rinse the mutton pieces under cold water and pat dry.
​ Marinate the Mutton:
● In a bowl, mix the mutton with whisked yogurt, fennel powder, ginger powder,
half of the Kashmiri red chili powder, and turmeric powder. Let it marinate for
at least 1 hour, preferably longer in the refrigerator.
​ Cook the Mutton:
● In a heavy-bottomed pan or a pressure cooker, heat the mustard oil to a
smoking point, then lower the heat.
● Add asafoetida, cumin seeds, bay leaves, cloves, cardamom pods, and
cinnamon sticks. Sauté for a few seconds until the spices release their
aroma.
● Add chopped onions and cook until they turn golden brown.
● Add ginger and garlic paste, and sauté until the raw smell disappears.
● Add the remaining Kashmiri red chili powder and salt. Mix well.
● Add the marinated mutton along with all the marinade into the pan. Cook on
high heat for a few minutes, stirring continuously.
● Reduce the heat to medium, cover the pan, and let the mutton cook until it
starts releasing oil, stirring occasionally.
● Add water, cover, and simmer until the mutton is tender. If using a pressure
cooker, cook until the mutton is tender according to the cooker's instructions.
​ Final Touches:
● Once the mutton is tender and the gravy has thickened to your liking, check
for salt and adjust if necessary.

​ Prepare the Dough:
● In a mixing bowl, combine the flour, salt, sugar, and yeast. Gradually add warm
water and knead until a smooth dough forms.
● Cover the dough and let it rest in a warm place for about 1 hour or until it
doubles in size.
​ Shape and Cook:
● Punch down the dough and divide it into small portions, shaping each into a
ball.
● Flatten each ball into a disc and, if desired, sprinkle sesame seeds on one
side.
● Heat a pan over medium heat and cook each side of the bread until golden
brown and puffed up. Keep them covered with a clean cloth to stay warm.

Preparing the Pork Filling:


​ Cook the Pork:
● Cut the pork belly into large chunks. In a pot, combine the pork with soy
sauce, oyster sauce, hoisin sauce, Chinese five-spice powder, sugar, garlic,
ginger, green onions, star anise, and cinnamon stick. Add enough water to
cover the meat.
● Bring to a boil, then reduce the heat to low and simmer for about 2 hours or
until the pork is very tender.
​ Shred the Pork:
● Once the pork is cooked and tender, remove it from the pot and shred it into
smaller pieces. Reduce the sauce left in the pot to thicken it, then add the
shredded pork back into the pot and mix well to coat the pork with the sauce.

● Slice each piece of bread (Mo) halfway through to create a pocket.
● Spoon a generous amount of the pork filling into the bread. Add additional
