Recipes

1. WARM THAI CHICKEN SALAD

Serves 6

Ingredients
1 tbsp olive oil
500gms 2 boneless chicken breasts
2 cups mixed lettuce leaves
1 cup cherry tomatoes
2 cucumbers, peeled and chopped
2 onions, sliced
3 tbsp fresh mint leaves

Dressing:

1 tsp finely grated lime rind


3 tbs fresh coriander leaves
1 tbs jaggery
2 tbs lime juice
1 tbs Balsamic vinegar
1 tbs light soy sauce
4 tbs Thai fish sauce
2 tbs Thai sweet chilli sauce

Method

Show all ingredients - P

1. Heat the oil in a frying pan over high heat until hot. Add chicken and cook for two
minutes on each side until succulent. Set aside to cool. P
2. Arrange lettuce, tomatoes, cucumber, onions and mint attractively on a serving platter.P
3. To make dressing, place lime rind, Balsamic vinegar, coriander, jaggery, lime juice, soy,
chilli and fish sauces in a bowl and mix to combine. V
4. Slice chicken thinly and arrange on salad, then drizzle with dressing and serve.V

Tip

For best results char grill or fry chicken just before you are making the salad and toss in warm.
CREAMY LIME CHEESECAKE (Eggless)

Ingredients

1 ¼ cup (150g) Digestive Biscuits crushed

4 tbs Butter

450 g Cream Cheese at room temperature

1 cup(250ml) Cream

2 tbs Gelatin mixed in 6tbs Lime juice

I cup (200g) Castor Sugar

Grated rind of 2 Limes

Method

1. Grease an 8” cake tin. P


2. Crush the biscuits coarsely with a rolling pin. V
3. Transfer to a mixing bowl.
4. Melt the butter V
5. Pour into the biscuit mixture. P
6. Mix well with your fingertips and press into the base of the cake tin. V
7. Refrigerate.
8. Meanwhile, in another bowl, blend together the cream cheese and cream with a balloon
whisk until smooth. This should not take more than a minute or so. V
9. Put the gelatin and lime mixture in a microwave for 10 seconds until the gelatin is
completely dissolved. V
10. Add the gelatin and lime juice to the cream cheese mixture. P
11. Add sugar and stir until smooth.P
12. Remove the biscuit base from the refrigerator and pour in the lime cheese mixture.P
13. Leave to set in the refrigerator for 2-3 hours.P
14. Serve cold garnished with a slice of lime.P
