Making good food

choices.

A guide by Hafsa Khamkar.


An Introduction:
To embark on this rather enlightening journey
where I intend to express my devotion to food, I will
begin by talking about what makes food so “good”.
The term in itself is subjective. What is good to me,
will not be good for you, however how do we
categorise something as good? What is taste and
how do we inculcate it? What are the criterias of a
restaurant earning a michelin star? Do cost prices
affect our choices in food? How does comfort food
affect us? Allow me to introduce you to the world of

1. Taste
When it comes to food, taste is the
only prominent factor that matters,
everything else comes second.

The oxford dictionary defines


“Taste” as “a person’s liking for
particular flavors” in layman’s terms it
is your palate.

The taste receptors consist of the


five basic tastes: Sweetness,
Saltiness,Sourness,Bitterness adn
Umami.
Difference is Taste & Flavor.
The general public uses the terms “Taste” and “Flavor” synonymously,
However that is not the case. Taste is the process that happens inside the
mouth. Flavor refers to the general aroma of food, meaning
the way a food smells plays an indirect impact of how we
perceive the food to taste.

According to research around 75%-95% of what we


believe to be taste, is actually from the smell. Flavor also
incorporates other sense like the feel of the food in our
mouth, texture, the sound certain foods make etc.
Cuisine: A geographical
wonder.
Cuisine refers to “a style of method of cooking, especia-
lly characteristic of a popular country, region or establishment.
Take for example Indian cuisine, which hints at food
prepared in India taking into account all the prevailing
conditions such as availability of ingredients, religion, taste
and alot more.

someone, and may be associated

individual, or it may apply to a
specific culture.
