Questions For Bar Utility

How to introduce yourself ? / Who are you ? / Tell me about your


personality ?

Thank you for your time, I would like to introduce my self, my name is agus
dicky sudiadnyana, you can call me dicky, I was born on 22 august 1999 in
Denpasar. Now I’m 20 years old. I love travelling and photography.

In 2018 I was graduated from Royall bali college my majoring in education


diploma 1 Housekeeping dept. I have been training at Samaya hotel ubud as
public area attendant for 6 month since july 2018 until December 2018. And
now I’m still working at Bali Dynasty resort kuta as room boy since January
2019 until present.

I live with my family, there are my parent, my younger brother. I love them
so much. That way I would like to working on board at cruise ship especially
in your company. Because I would like to take my parent responsibility and
take care of my brother his future. And I hope If I can work in your company I
can make my family proud of me

I’m a professional person, honest ,loyal, can worked under pressure, and
can never say no to anyone if they asking me for help. Also I have vision in
my life I can be manager in your company in 10 years. Because I believe if I
work in your company I can improve my carrier.

And as I know Royal Caribbean cruise line is one of the biggest cruise
company in the world. It’s make me proud if I can be the one of your crew .I
thinks it all about my self sir/ mom

1. What kind of bar do you know ?


 American bar : A bar that sells cocktail
 Aperitif bar : A bar that sells aperitif beverages, beers, and alcoholic
beverages
 English bar : A bar that sells beers, whisky, alcoholic beverages (public
house), and light food
 Dancing bar (or discotheque) : A bar that sells any kinds of
 beverages and provides a place to dance
 Snack bar : A bar that sells limited beverage and light food, such as
sandwiches/snacks, etc.
 Mini bar : A small bar that sells limited kinds of beverages

2. What is your responsibilities as a bar server ?


Being responsible to the bartender, Taking the bar stuff from the store,
Changing dirty linen to the laundry, Preparing ice and garnishes for the
drinks, Cleaning up the bar area.

3. What do you do as a bartender ?


Being responsible to the head Bartender, Making/serving the drinks ordered
by the guests or the bar waiters, Making report of the sold out beverages,
Keeping or maintaining the cleanliness of the area of the bar counter.

4. Tell me about Bar equipment do you know ?


a. Jigger/measuring glass ; This tool/equipment is used to measure the
amount of beverage that will be mixed (mixed drinks) and also to make
straight drinks.
b. Shaker (glass/metal) ; This equipment is used to mix the beverages, for
example cocktail, by putting the beverage and the mixture into it. Close it,
then shake it for not too long.
c. Mixing glass ; This equipment is used to mix the beverage. The beverage
that is put in this tool will be stirred using the long bar spoon.
d. Long bar spoon ; This tool is used for stirring the drinks and making the
cocktail with the mixing glass.
e. Spring strainer ; This tool is used for straining the drinks, for example the
drinks that made with the shaker, mixing glass, squeezer, etc.
f. Fruit knife ; It’s a sharp knife especially designed for cutting the fruits. The
usage of this tool has to be equipped with the cutting board made of wood
or plastic.
g. Cutting board ; This tool is used for cutting/slicing fruits.
h. Ice tong : This tool is used to take ice cubes by clamping them.
i. Ice scoops ; This tool is used to take the ice cubes.
j. Can / bottle opener – wine opener/cork screw ; This is used to open the
bottles or cans. The best type of the tools is the one that can also open
the bottles, cans, and corks. This type is known as the wine opener.
k. Funnel ; This is used to help pouring the liquid into the bottle.
l. Stirrer ; This is used to stir the drinks, and is served together with the
drinks. Therefore, the guests can stir the drinks by themselves also. These
tools are mostly made from plastic, and can be used as promotional tools
of the bar.
m. Fruit stick : This is used to set the fruits as garnish for the drinks in serving
it.
n. Blender : This is used to mix the drinks. This an electrical tool to stir the
drinks in order to make the mixture more blend compare to the one that is
mixed by shaker or mixing glass.

5. What kind of glassware do you know ?


Red wine glass, white wine glass, sherry/pot glass, and champagne
Glass, Collins glass, highball glass, and old fashioned glass, beer glasses,
brandy glasses and a cocktail glass.

6. Tell me about bar supplies that you know ?


Ices (ice cubes, ice-scars, crushed ices), Oranges, Lemons, Pineapples,
Cherries, Olives, Pearl onions, Tabasco, Worcestershire, sauce, Milk, Sugar,
Salt & Pepper, Nutmeg , Cinnamons, etc.

7. How do you Classification for Beverages ?


Classification of Beverages :
a. Non-Alcoholic Beverages such as :
- Natural Mineral Water ( Aqua, Appolinaries, Vichi, Evian, Perrier,
and Selters ).
- Artificial Mineral Water (Tonic water : No color/clear, with the
aroma/scent of quinine, Ginger ale : Light golden color, with the
aroma of ginger, Bitter lemon : Pale cloud color, with the strong
aroma of lemon, Coca cola : Dark brown color, with the aroma of
cola, Seven up : Clear color, with the aroma of lemon)
- Juices (Orange juice, tomato juice, lemon juice, apple juice,
grapefruit juice, pineapple juice, lime juice, etc. )
- Squash (Grapefruit squash, lemon squash, orange squash, etc. )
- Crush (orange crush. )
- Syrup, tea, coffee, milk, etc.

b. Alcohol Beverages :

b.1. Beer

Beer is the beverage that contains alcohol (4%-7%) and is


produced from barley/malt, hops, sugar, water, yeast, and
finings.

b.2. Spirit : dry spirit such as Brandy, Whisky, Gin, Rum, Vodka,
Tequila ) and sweet spirit/liqueur / cordial such as Crème de
menthe, Kahlua/Tia Maria, Cointreau, Drambuie, Grand Marnier,
Benedictine D.O.M, Southern Comfort, Cherry Heering )

b.3. wine :

- Sparkling Wine ( Champagne ) ; This type of wine usually has


white yellowish color with foamy as the main characteristic
because it contains gas.

Example : Moet & Chandon, Mumm Cordon Rouge, Pommery &


Greno, Piper Heidsieck.,Dom Perignon.

- Fortified Wine : Sherry (Sanderman, Tio Pepe, Pedro Domecq,


Williams & Humbert), Port (Fine Old Sanderman. Dow,
Cocburn, Taylor ) Madeira (Spinola Rich, Good Company,
Grandcama de Lobos, Crown, Coverdale )
- Aromatized Wine : Vermouth (Martini Rossi, Martini White,
Cinzano, Noily Prat, Carpano, Punt-e-mess ) Cocktails
(DAIQUIRI COCKTAIL, DRY MARTINI COCKTAIL ) , Bitter and
anisette (Amer Picon, Pernod and Pastis, Campari Bitter )

8. How many Methods in Mixing Drinks do you know ?


There are 4 ways/methods in making cocktails:
1. Straight (to the glass)
2. Stirring/mixing
3. Shaking
4. Blending
9. What Types of Beers do you know ?
Type of beers such as Lager beer, Ale, Porter, Stout,

10.How many type of brandy do you know ?


Four types of Brandy that that we know are:
1. Cognac
2. Armagnac
3. Brandy &
4. Fruit Brandy

Some brands of Brandy are:

Cognac : Martell, Hennessy, Remy Martin, Bisquit, Napoleon, etc.

Armagnac : Armagnac

Brandy : Christian Brothers, Asbac, Uralt, Durjadin, St. Thomas

Fruit Brandy: Cherry Brandy (bols) Kirschwasser, Barat Palinka (peach


brandy)

11.How do served whisky ?


Whisky can be served in some ways:
Straight : Without ice and using shot glass
On The Rock : With ice cube, using old fashioned glass
As the main ingredient in making cocktail.

12.how do you distinguish the type of whiskey?


According to the country where the whiskey is produced, it can be
distinguished as follows :
1. American whisky (Jack Daniel, Fine Arts, Four Roses, Seagram’s
Seven Crowns, Jim Beams, Old Grand Dad.)
2. Scotch whisky (Johnny Walker (black and white label), Chivas Regal,
Black & White,White Label, White Horse, J & B Rare, Vat 69, Dimple,
Cutty Sark.)
3. Irish whisky (John Jameson, John Power’s, Tullamore Dew, Old
Busmills.)
4. Canadian whisky (Canadian Club, Seagram’s V.O., Canadian
Schenley OFC, Dominion Ten )

13.Can you handle guest complain ?


Yes I can. I do with L.E.A.A.F procedure
- L for listening what guest complains and never makes an argument or
don’t interrupt.
- E for empathize , feeling what the guest feel about what happen
- A for Apologies , say deeply sorry about what happening with them and
- A for action, take the best action , inform supervisor and execute the
problem
- F for follow up, ask the guest if the complain already solved and
everything is okay.

14.What is 3 bucket system ?


THREE BUCKET SYSTEM
Three Bucket System is a system that must be used to clean all areas,
especially in restaurants and galley areas, along with the supporting places.
This system uses three buckets of different colors with different functions.
The purpose of this system is the result of optimal cleaning while killing
germs and bacteria that can cause infectious diseases for guests and crew.
This cleaning system is used as a standard system that is required according
to USPH standards and must always be applied as a routine and periodic
cleaning system.
• RED BUCKET for washing
Containing warm water mixed with detergent or soap. The goal is to wash
and scrub the entire surface by using a cleaning pad.
• GREY BUCKET for Rinsing
Containing warm fresh clean water, using a clean cloth, rinse the entire
surface that has been washed and rubbed to remove traces of soap and dirt
that remains.
• WHITE BUCKET for sanitizing
Containing fresh clean cold water with chlorine (bleach) 100 ppm. Wipe the
solution over the entire surface to kill germs and bacteria. Allow it to dry by
itself.
15.Can you handle guest complain ?
