Procedures for Making Fermented Fruit Juice:
1.Choose your fruits; Select ripe, sweet fruits like
bananas, papayas, mangoes, or grapes.
2.Chop the fruits: Cut the fruits into small pieces
to facilitate juice extraction.
3.Mix with sugar: Combine 1 kg of chopped fruits
with 1 kg of brown sugar or molasses in a basin.
Mix thoroughly with your hands to ensure all fruit
pieces are coated with sugar.
4.Place in a container: Transfer the mixture to a
container, allowing the juice to drain from all
sides.
5.Cover and store: Cover the container with a
manila paper or cloth, securing it with a string or
rubber band. Label the cover with the processing
date and expected harvest date. Store the
container in a cool, dry, shady place, free from
pests.
6.Extract and preserve: After seven days, lift the
bagged mixture and squeeze it hard to extract the
remaining juice. Collect the fermented extract and
store it in dark-colored glass jars.
