Clean Coffee Machine/ soak heads / sanitize.
Clean 2nd ice well & Drink pass
Clean beer tap. Tray, taps & behind it. First
with cloth then a second time with polishing
cloth.
Put plugs back into beer faucet taps, empty
the Heineken beer foam scrapers holder and
into wash
Cordials, bitters, garnished and dried fruit
packed away on tray on top of bar
Store fresh fruit and garnish tray in fridge for
next day.
Put away juices and syrups and store them in
fridge
Empty ice well, Pour hot water to melt left
over ice, use multipurpose spray and dry it
with polishing cloth. Don’t forget the areas
around the well.
All jiggers, knives, spoons, cutting board,
shakers ect, washed, dried and placed in the
empty well
Place rail spirts into the empty well. Clean the
benches on either side of the well, the speed
rail.
Put floor mats away in front of the ice
machine.
All bar matts are to be wash and placed to
dry.
Water jugs are washed, dried and put away
into 2nd ice well.
All glassware washed, Make sure you’re
checking for chips and clear, clean glasses.
All open wines are DATED and gassed with
wine save.
Red and blue glass scrubber is emptied and
run through glass washer LAST.
The glass washer is drained completely and
wiped outs. Inside and out.
Ensure the sink filters are cleaned out and the
all-3 sinks are cleaned.
Make sure all surfaces in the bar have been
wiped with a multipurpose spray and are
completely clean.
Sweep and mop the floor with hot water and
floor sanitizer
Put used polishing cloths in the laundry bin in
staff room.

Check Bar, freeze and milk fridge
temperature and write it down on
log sheet
Place bar matts down on floor, Bin
bag in the rubbish bin. Matts along
the bar.
Put your shakers on top of the bar
and extra shaker ends at each end
of the speed rail with Hawthorn
strainers in one end and fine
strainers in the other.
Fill speed rail with spirts from the
empty well.
Remove plugs from beer faucet
taps, put them in soda water, fill
the Heineken foam scraper with
water and put it next to taps.
Clean the glass washer. Pull out
the filter and undo each round
water spray, scrap out any seeds
etc. and replace, continue until all
nobs are checked. Pull out the
black filter under the spinning X,
check its clear of debris too. Wipe
out the glass washer, Replace all
the pieces, and turn on.
Pull out all your Juices and syrups.
Check that EACH product is still
fresh before putting it in the well.
If not make sure you are cleaning
the bottles before refilling and
dating.
Fill ice well with ice.
Sort out Bidfood and centre point
orders. Sign the delivery form and
leave in office.
Prepare fruit and cocktail
garnishes as necessary. Throw out
bad looking fruit.
Ensure the bar is fully set up, teas
are full, straws, napkins, polishing
cloths, ect.
Stock the fridge. No empty spaces
unless out of stock.
