Banana Loaf Cake
Makes 2 loaves.
Ingredients
1/3 cup oil
1 cup sugar
2 eggs
3 large over-ripe bananas
½ tsp vanilla essence
3 cups flour
3 level tsp baking powder
1 level tsp bicarb
¼ tsp cinnamon
¼ tsp salt
¼ tsp nutmeg
1 tblsp lemon juice
¼ to ½ cup milk
Icing sugar for drizzle
Method
Preheat the oven to 140C Fan.
Grease and line two 900 gram loaf tins, and set aside.
Cream together eggs and sugar with a cake mixer. Add in oil slowly and mix till thick and creamy.
Peel and mash the bananas. Add to above mixture with the vanilla essence.
Place lemon juice into ¼ cup of milk. Leave aside.
Place the rest of the dry ingredients into a bowl. Slowly fold into egg mixture. Do not over mix.
Add milk mixture and incorporate. Add ¼ cup more milk if needed.
Place the mixture into the loaf tins, and smooth out.
Bake in the oven for 45 min. to 1 hour or until a skewer inserted comes out clean.
Allow to cool on a wire rack.
Make an icing drizzle by mixing icing sugar, melted butter, vanilla essence and milk.
Brush atop the loaves, and slice up!
