ANNOUNCER: Today on Food Close-up – The International Food Festival.


HOST: With all the talk recently of transportation costs in shipping food and energy use for
producing food, we may have forgotten something important. Sharing another culture's food
is a great way of getting to know about other countries. So I'm here today at The International
Food Festival, in Central Market, not to find locally grown foods as I usually do, but to discover
foods and recipes from overseas. In many cases, the food sellers here today have used a lot of
local ingredients to create dishes from their countries. So we have a beautiful mixture of local
foods and faraway flavors. Excuse me.
WOMAN 1: Yes, hello.
HOST: Can you tell me about this food?
WOMAN 1: Sure. This is sushi. One of Japan's most popular foods.
HOST: Sushi. OK. And what's in it?
WOMAN 1: All of the sushi I have here today is made with rice and with fresh fish. Raw fish. It's
simple food – not many ingredients.
HOST: I see. It's really beautiful. And I guess if you're using fresh fish, that means it's local, right?
WOMAN 1: Yes, that's right. The fish is fresh from the local fish market.
HOST: And the rice? Is that from Japan? Or China?
WOMAN 1: Actually, today I've used domestic rice from California.
HOST: Interesting. Thank you!
WOMAN 1: Would you like to try some sushi before you go?

WOMAN 2: I know. We have it at breakfast, lunch, dinner, or for a snack … any time!
HOST: And your ingredients? Where are they from?
WOMAN 2: One hundred percent Brazilian. Most of them don't grow in this country, so they're
imported. We want to bring a bit of Brazil here.
