Lesson Proper:
Common Types of Frostings and Their Storage Notes:
 Boiled Icing – Store at room temperature; do not refrigerate.
 Buttercream Frosting – Can be kept at room temperature for 3
days or refrigerated for 2 weeks.
 Cream Cheese Frosting – Must be refrigerated; can be frozen.
 Fondant – Store unused in airtight containers at room
temperature.
 Ganache – Room temperature for up to 2 days; can be frozen but
may lose sheen.
 Royal Icing – Room temperature storage; dries quickly.
 Fresh Fruit Topping – Always refrigerate; use within hours of
adding to cake.
