Chocolate and walnut cheesecake
RESULT - 1 cheesecake
Dimensions: 26 cm round
INGREDIENTS
Crust:
100 g digestive biscuits
50 g walnut kernels
4 tablespoons melted butter
2 tablespoons dark cocoa
1 tablespoon powdered sugar
Cream:
700 g cream cheese
200 g sour cream
180g sugar
100 g dark chocolate
100 g sour cream for the whipped cream
4 eggs
1 pinch of salt
2 tablespoons starch
4 tablespoons dark cocoa
1 tablespoon Amaretto or rum
Chocolate ganache:
100 g dark chocolate
100 g sour cream for the whipped cream
20g butter
Plus 200g well-whipped cream and 50g melted dark chocolate for decoration
Makes: 26 cm round
INSTRUCTIONS
1. For the crust, crush the biscuits with the walnut kernels in a food processor. Add the melted butter, cocoa and powdered sugar,
then transfer the mixture into a cake tin (mine was 26cm in diameter) and press well into the bottom of the tin. Set aside.
2. For the filling, heat the whipping cream, remove from the heat and add the chopped chocolate. Stir until melted and set aside.
3. In a large bowl, mix together the cream cheese, sour cream, sugar, eggs, cornstarch, salt, cocoa, and Amaretto. Add the
chocolate and mix well.
4. Pour the mixture into the cake tin, over the crust, and bake at 160C for 1 hour. During the last 10 minutes of baking, change
the temperature to 180C. The idea is that at high temperatures, the cheesecake starts to rise. Although it is not recommended
to rise for many such cakes, my intention was to create that hollow in the middle to fill with chocolate ganache, so I changed
the temperature and let it rise a little.
5. When it's ready, remove it from the oven and let it rise.
6. To make the ganache, heat the cream. Add the chopped chocolate and stir until it melts evenly, then fold in the butter.
7. Let the ganache cool slightly, then pour it over the cheesecake.
8. Cover with whipped cream and make a lattice of melted chocolate. Decorate with strawberries or other fresh fruit. Enjoy!
