Baked Mac and Cheese
Ingredients
3 cups (12 ounces) uncooked penne (tube-shaped pasta) 1 (12-ounce) carton 2% low-fat cottage cheese 1/2 cup (2 ounces) finely shredded sharp cheddar cheese 1/2 cup (2 ounces) grated fresh Parmesan cheese, divided 1/2 teaspoon salt 1/8 teaspoon freshly ground black pepper Cooking spray 3 tablespoons panko (Japanese breadcrumbs) 1 tablespoon minced fresh flat-leaf parsley

1. 2. 3. 1. Preheat oven to 375. 2. Cook pasta according to package directions, omitting salt and fat. Drain; place in a large bowl. 3. Place cottage cheese in a food processor; process until smooth. Combine cottage cheese, cheddar cheese, 1/4 cup Parmesan cheese, salt, and pepper. Add the cheese mixture to pasta, and stir well. Spoon mixture into an 11 x 7-inch glass or ceramic baking dish coated with cooking spray. 4. Combine remaining 1/4 cup Parmesan, panko, and parsley in a small bowl. Sprinkle evenly over pasta mixture. Bake at 375 for 10 minutes. 5. Preheat broiler (do not remove dish from the oven). 6. Broil pasta 1 minute or until top browns.

Sloppy Joe Sliders
Ingredients
1 large carrot 10 ounce lean ground beef 3/4 cup prechopped onion 1 teaspoon garlic powder 1 teaspoon chili powder 1/4 teaspoon freshly ground black pepper 1/4 cup ketchup 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 1 tablespoon tomato paste 1 teaspoon red wine vinegar 1 (8-ounce) can no-salt-added tomato sauce 8 slider hamburger buns

1. 2. 1. Preheat broiler. 2. Heat a large nonstick skillet over medium-high heat. While the pan is heating, grate carrot. Add carrot, beef, and onion to pan; cook 6 minutes or until beef is browned and vegetables are tender. Add garlic powder, chili powder, and pepper; cook 1 minute. 3. Combine 1/4 cup ketchup and the next 5 ingredients (through tomato sauce) in a small bowl. Add ketchup mixture to pan, stirring to evenly coat beef mixture. Simmer for 5 minutes or until thickened. 4. While sauce thickens, arrange buns, cut side up, in a single layer on a baking sheet. Broil 2 minutes or until lightly toasted. Honey-Lime Chicken Kebabs with Mango Slices

1 pound skinless, boneless chicken breast, cut into 1-inch cubes 2 teaspoons grated lime rind 2 teaspoons minced garlic 1 teaspoon chili powder 1/4 teaspoon kosher salt Cooking spray 2 tablespoons fresh lime juice 1 tablespoon honey 2 sliced peeled mangoes Chili powder (optional)

Place kebabs on a broiler pan coated with cooking spray; broil 4 minutes on each side or until done. 3. Combine juice and honey in a small bowl; stir with a whisk. Arrange kebabs and mango slices on a platter; drizzle with honey mixture, and sprinkle with chili powder, if desired.
