matteroftimeuntilIgaveitashot.AndwithChristmascomingup,whatbetterexcuse?
Thisfillingismadeofblendedpoppyseeds,nuts,lemonandvanilla,allrolledintoayeastedcake.It's
nottoosweet,nottooheavy,andtheperfectteaorcoffeecake.
Now,letstalkpoppyseeds,becauseyou'regoingtoneedalotofthese.AndImeanalot.
Don'teventhinkaboutbuyingthoselittlepacketsfromthesupermarket.You'dneedaninsanenumber
ofthem,andthisisdefinitelytheexpensiveoption.Doyourselfafavourandheaddowntoawholesale
storelikeMooreWilson'sorToops,andgetabulkpacket.Igota1kgpackforsomethinglike$10,
whichwillmaketwolarge(or4smaller)cakes.

Startbyputtingthepoppyseedsandmilkinapotandsimmergentlyfor20minuteswiththelidon,
stirringoccasionally.Leavetocoolinthepot.
Next,andstartonthecake.Heatthemilkinthemicrowaveforaminuteorsountilwarm(nohotter
thaniscomfortableputtingafingerin).Sprinkletheyeastontop,andleavefor5minutesorso.
Meanwhile,creamthebutterandsugarforafewminutesuntiltheyarelightandfluffy.Addtheegg
yolksonebyone,beatingbetweeneachaddition.Stirinthemilkmixture,whichshouldnowbefoamy
onthetop.Addapinchofsaltandtheflour,andstirtogetheruntilcombined.Coverwithateatowel
andleaveinawarmplacetoriseforanhourorso.
Whilethecakeisrising,blendthepoppyseedsinafoodprocessoruntiltheybreakdownabit.You
wanttocrackthemopenandformacoarsepaste.Ifyou'regettingsomethingmoreakintocoffee
grindsthanapaste,that'sok,justaddalittlemoremilkoncethey'regrounddown.Youwantthe
texturetobesomethinglikewetsand.Meltthebutter,andstiritintothepoppyseedmixturewiththe
sugar,choppednuts,lemonzest,and1/2tvanillaextractintothepoppyseeds.Turntheovento180C.
Beattheeggwhitesuntilstiffpeaksform.Foldintothepoppyseedmixture.
Nowrolloutthecakeonaflouredboard,roughly1cmthick.Spreadthepoppyseedmixtureoverthe
dough,leavingahalfcmorsoontheedges.Gentlyrollupthecakelengthwise,likeaSwissroll.Pinch
theendstogetherandtuckunder,tostopthefillingcomingoutwhenitcooks.
Wrapthewholethinguptightlyinbakingpaper,makingsuretheopeningisonthebottom.Thiswill
stopitrisingintheovenyouwantittoholdits'shapeandkeepallthefillinginside!
Poponabakingtrayintheoven,andbakefor45minutesorso.
Whilethecakeisintheoven,maketheglazebycombiningtheicingsugarandlemonjuice,and
enoughwatertomakeathickicing.
Oncethecakeisdone,pullitoutoftheoven,letitcoolforafewminutes,thendrizzleovertheglaze
whileit'sstillhot.

1/4redonion,slicedasfinelyasyouphysicallycan
Goodqualityoliveoil
Saltandpepper
Edibleflowerstogarnish(optional)
StartbypeelingtheorangescarefullyIuseasmallparingknife,andjustcuttheskinoffinstripsdown
theorange.Becarefultoremoveasmuchofthebitterpithaspossible.Sliceintoroundsandarrangeon
aservingplatter
Tearthemintovertheoranges,andscatterovertheredonion.Pushtheredonionandmindbetween
theorangeslices.Sprinklewithsaltandpepper,anddresswithagoodglugofoliveoil.Setasideat
roomtemperatureforanhourorsofortheflavourstomingle.
