Lamb would also work. 2 lbs green beans cut and trimmed (frozen beans work great too!) 1/4 cup olive oil Salt & pepper to taste 1-2 tsp Aleppo pepper 12 oz tomato paste 2 Tbsp pepper paste (hot or mild)@tazah brand. 8-10 garlic cloves (peeled) I used more because they were small. 10-12 cups water DIRECTIONS- In a big heavy bottom pot or Dutch oven, heat the oil. I used my @hexclad pot. Pat your beef dry, and generously season with salt and pepper. Sear beef on all sides, working in batches. Remove and set aside until all the beef has been browned. Add in garlic cloves and water. Bring to boil and add in tomato paste, pepper paste, Aleppo pepper, and more salt & pepper (these are to taste). Combine well and bring the beef back into the pot along with any collected juices. Lower heat, cover and let simmer for at least 3-4 hours. Believe me, it’s worth the wait! Meanwhile trim your beans. Before adding the beans, skim off any fats that have pooled at the top of the stew. Use a small ladle or spoon and discard the fat. Next add the beans to the pot. Raise the heat to medium and continue cooking until beans are tender. Check seasonings after beans are cooked and adjust if necessary. Serve with fluffy, Lebanese rice and enjoy! ✨Note-This makes quite a bit of stew, but we typically eat this for at least 2 days! INGREDIENTS 3 cups long grain basmati rice 1 teaspoon pink himalayan salt 4½ cups filtered water ¼ teaspoon saffron ¼ teaspoon turmeric ½ cup avocado oil 2 tablespoons salted butter, cubed PREPARATION Place the rice in a large pot and fill it with cold water. Swirl the rice with your hand, then drain the water. Repeat this process two more times until the water runs clear. Let it sit for an hour. Add rice to a large pot with 4½ cups water and salt. Add salt, then place on the stove to parboil over medium/high for 5-7 minutes until the rice is soft on the outside but slightly hard on the inside. Then drain. In a small bowl, whisk together 2 tablespoons of hot water, saffron, tur
