Start by washing your potatoes and slicing them into your desired shape. I opted not to peel mine, but you can choose to peel them if you prefer. Next, bring some water to a boil. Once the water is boiling, add your potatoes and blanch them for 2 to 3 minutes, depending on their thickness. I chose to blanch mine for three minutes. Immediately after blanching, remove the potatoes from the heat and transfer them into a bowl of ice-cold water. Allow them to sit in the ice water for 5 to 10 minutes until they are completely cool. After they have cooled, strain and drain the potatoes. Lay them out on a dish towel and pat them dry. Sprinkle with salt and let them sit for 20 minutes. The salt will help draw out extra moisture, which is crucial because we want dry potatoes for better flavor later on. Next, line a cookie sheet and spread your potatoes out evenly. Flash freeze them until they are completely frozen. Once frozen, transfer them into a freezer-safe container, such as Ziploc bags. And that’s it!
