To make chicken hekka, slice chicken into small pieces and put them in a bowl. Add sugar, soy sauce, and mirin to it and mix. Then, heat oil in a pan and add ginger, chicken, and soy sauce to it. Chicken hekka is a popular dish in Hawai’i. Tender chicken stir fried with delicious vegetables tossed with noodles in a slightly sweet yet salty sauce. The ultimate comfort food.

Ingredients:
1 tbsp your choice of cooking oil (ex: canola, vegetable or sesame oil)
1 1/2 lbs chicken thighs, cut into bite size pieces
Salt and pepper, to taste
4-5 slices of ginger
3 cloves of minced garlic
1 small onion, sliced
4 cups chicken broth
1/4 cup shoyu
3 tbsp sugar
3 tbsp mirin
1/2 cup rehydrated shiitake mushrooms
1 carrot, peeled and thinly sliced
4 oz bamboo shoots
1 cup of watercress
2 bundles of long rice (also known as mung bean or cellophane noodles)
1 cup tofu, cut into cubes (optional)
Green onions for garnishing

1. In a pot, on medium-high heat add oil and chicken. Season with salt and pepper. Cook for 5 min or until brown.
2. Next, add ginger, garlic and onions. Sauté for 2-3 min or until fragrant.
