Barbadian national dish. Cou-cou & Flying Fish is made with cornmeal and okras (a savoury dish similar to polenta), plenty of rich gravy and steamed flying fish - a small warm water fish native to the island. Cou cou can also be eaten with any other fish. Popular accompaniments are pickled cucumber, slices of sweet potato and of course pepper sauce.

Bajan fish seasoning | “This classic Bajan seasoning is typically made using local herbs, garlic, onion and, of course, fiery Scotch bonnet chillies. In Barbados, the seasoning is usually stuffed into the fish cavity, but I like to slash the fish a few times on each side before rubbing in the seasoning so the flavour really permeates the flesh.
