It is so easy to do. I'm just adding some rice to the bottom of a 13 by eight Pyrex baking dish. Then on top of that I have two cans of red enchilada paste. I like the old El Paso kind but you guys can use any kind you want and just combining that with the rice and then mixing it all together and spreading the rice and the enchilada sauce end to end making sure that all the rice is touched by the enchilada sauce because this is what's going to help cook it. Now, I have a few sliced up chicken breast here. I made some incisions in it so that it will help cook evenly and how it'll cook perfectly all the way through and then, just lining the Pyrex dish with the chicken. I cut four thinking that it would be a big enough dish but it definitely wasn't. Then I'm going to add some taco seasoning over the chicken. This is just going to really drive home that flavour profile and make sure everything is well seasoned and delicious. Obviously we gotta hit it with some salt and some pepper. You always want to season everything as much as you can. Over seasoning is possible but in this case it's perfect. Now I like it a little bit spicy. So I'm going to add some pickled jalapenos on top. You don't have to do this but if you like spice and you want a little bit of acidity you can easily do that. Um an alternative here is to use hatched chilis which are slightly less spicy. A little bit more smokey but also have a nice acidity. Now we're going to put this in the oven at 350 for 1 hour. And when it comes out check this out guys. This is so easy and so delicious. Everything is cooked for you. You could see the rice. Awesome. Now, I'm adding some Mexican crema on top of this for a little bit of creaminess texture but you can also use sour cream and then a but a cup and a half of Mexican blended cheese. You could also use cheddar, you can use Colby Jack, whatever and then that goes back in the oven at 350 for another 10 to 15 minutes, just until everything is melted and I'm going to garnish it with some chopped up green onions. You could also use cilantro but I like the oniony flavor a little bit more and then this one serves about 6 people. You could also double that up and make smaller pieces if you're having like a party and cut up 12 pieces. But ultimately this is so easy and so delicious. Check out this cross section guys. It is super fluffy. It's cheesy. It's creamy. We got a little bit of spice from the pickled jalapenos. Awesome cheese pull. Putting that on a plate. This chicken and enchilada is just so easy. Look how perfect the chicken is. Oh my goodness. It's cooked unbelievably. This dump and bake enchilada rice and chicken. It's just so good. I can't believe how easy the chicken was to cook. And the rice. Really you just like throw everything in that casserole dish. And it turns out perfect every single time. It's just so good. Wow. Super cheesy. We got the spice from the jalapeno. Again the rice mixed with the enchilada. Perfectly cooked.
