Large kitchen soffit overhang

Make an eyesore a feature! Soffit turned in to a statement with wood accents that tie in with beams and wrapped island.

I need some ideas and help with dressing up the ugly soffit above my kitchen cabinets. I really would like to remove it and have it be an open space but that would be some major construction. Any ideas??
