Recipe from Shannon’s book TIKI: Modern Tropical Cocktails (great book) As much as I love rum based tropical cocktails, I also love non-rum based tropical cocktails. The Rye went down a treat here The crushed ice shake provided a great level of dilution & allowed for that frothy pineapple texture 60ml/2 oz Rye whiskey 15ml/0.5 oz Banana liqueur 30ml/1 oz Pineapple juice 22.5ml/0.75 oz Lemon juice 7.5ml/0.25 oz Cinnamon syrup 4 Dashes Angostura bitters 6 Dashes Peychaud’s bitters Pineapple leaf & orange peel garnish
