Ingredients: • 4 red shrimp, cleaned (meat and shells separated) • 3 tablespoons water • 1 tablespoon olive oil • 1 cup Pecorino Romano cheese, grated • Spaghetti (for 4 servings) • Black pepper, freshly ground • Salt, to taste • Lime, for garnish and seasoning • Extra virgin olive oil, for dressing Instructions: 1. Shrimp Sauce: Blend the shrimp heads and shells with water and olive oil. Strain to obtain a smooth sauce. Set aside. 2. RAVIOLIS AUX CREVETTES & CITRON VERT
INGREDIENTS POUR 2 PERSONNES : Pâte: - 300 g de farine pour pâtes (blé dur) - 3 œufs et 1 jaune d'œuf - 2 cuillères à soupe d'eau - 1 pincée de sel Remplissage: - 1 sac de crevettes - 2 jaunes d'œufs - 100 ml de crème - 1 citron vert (zeste) - Sel - Poivre Préparation: - Mélanger tous les ingrédients de la pâte et bien pétrir pendant environ 5 à 8 minutes. Enveloppez ensuite dans du film alimentaire et placez au réfrigérateur pendant 30 minutes. - Vous pouvez maintenant mettre tous les ingrédients de la garniture dans un mixeur et les réduire en purée. Étalez maintenant la pâte et recouvrez-la de la garniture. Vous pouvez badigeonner les bords avec du jaune d'œuf puis replier les raviolis ensemble. Découpez simplement vos pâtes et mettez-les dans de l'eau bouillante pendant 5 minutes.
