40min · 2 servings 1 pint of cherry tomatoes • 8 ounces of sliced mushroom • 1/2 bundle of broccolini florets (I saved the stems for an omelette) • 1 small onion diced • 1 tsp fresh or dry rosemary • 1 tsp fresh or dry thyme • 3/4 tsp salt • 1/4 tsp pepper • 2 Tbs olive oil • 1lb orzo uncooked • 3 cups of veggie broth • 3 ounce grated parm 3/4 cup shredded mozzarella -Preheat oven to 400F • -To a 9x13 baking dish, add tomatoes, mushrooms, broccolini, onion, rosemary, thyme, salt, pepper and coat with olive oil. • -Cook in oven for 15 min. • -Remove from oven, add orzo and broth. Mix well, cover with aluminum foil and return to oven. Cook for 10 min, remove and give a stir to ensure the orzo doesn’t stick to the botttom of the pan, then return to the oven (covered) and c

I used brown rice pasta from Trader Joe’s) - 4 chicken sausages (I used the spicy Italian from Trader Joe’s) - 1 head broccoli 1. Bring pot of water to a boil 2. Pour in pasta and cook according to package 3. While the pasta cooks add ingredients for for cottage cheese sauce to a blender and blend until smooth 4. Set aside 5. Cut up chicken sausage and broccoli and add to a pan with olive oil over medium heat 6. Season with salt, pepper, garlic powder, and onion powder 7. Sauté until broccoli turns a bright green color
