Oi Muchim, or spicy cucumber salad, is a Korean side dish (banchan) that can be prepared in no time at all! It’s my fave way to eat cucumbers because it’s very flavorful yet so easy to make.

Banchan are a key component in Korean meals. Banchan are side dishes that are served with the main course and are meant to be consumed throughout the meal and replenished as needed. Other examples of banchan include kimchi, spicy radish salad (mu saengchae), seasoned mung bean sprouts (sukju namul), and braised potatoes (gamja jorim).
