Whitney Berge on Instagram: "I don’t use fondant to cover my cakes anymore, but I will use it for small details.   Here is my fondant recipe that can be used for all fondant needs. Covering the full cake, or just details.   -16 oz Mini Marshmallows -1/2 tsp Clear Vanilla extract  -1/4 tsp Almond Extract (optional)  -1 Tbsp water -4 to 5 Cups Powdered Sugar (more to sprinkle on the counter soace)   Instructions:  -Pour entire bag of mini marshmallows in a extra large, microwave safe bowl.  -Add in extracts & water to the marshmallows. -Place bowl of marshmallows in microwave and melt on high power for 90 seconds.  -Remove from microwave.  -Add powdered sugar, use rubber spatula to start incorporating to the melted marshmallows.  -Once the powdered sugar has started to incorporate, set spatu Melting Marshmallows, Rubber Spatula, Fondant Recipe, Marshmallow Fondant, Almond Extract, Mini Marshmallows, Yummy Sweets, Small Details, Small Detail

400g White Chocolate ( I use Callebaut) (Or Use Deco Melts for “Mock Chocolate)
200g Glucose Syrup
500g Fondant

I used a cheap supermarket fondant to show how well this works. So you choose the fondant you like 

***For a sharp edge pop it into the freezer once covered and then cut the edges with a knife as you would with ganache

Make your modelling chocolate &add it to the fondant whilst it’s still wet or you will get lumps. It’s very sticky so gloves are great until it’s all combined

To scale this up or down

Start with your Chocolate, the amount you use, you will need half for the glucose syrup. To calculate the fondant amount use 25% more fondant than the chocolate.
E.G 
200g Chocolate halved will give you
