Ina's Rich Beef Barley Soup. My notes: Soak barley overnight and rinse off phytic acid. Replaced oxtails with 2.5 lb cubed chuck roast marinated in about 3/4 bottle red wine, 3 smashed garlic and 2 bay leaves- several hours to overnight. Added marinating juices to soup and 8 oz pkg mushrooms quartered to sautéed veggies. Bake in Dutch oven at 225 for 2 hrs or less.
