For years I've used a special wooden basket called a banneton to proof my round loaves of bread in. I'm teaching a bread baking class this weekend and needed a bunch of proofing baskets for the class.

Hello! I think I may have ruined a bunch of my bannetons. I was about to junk all of these (which is really too bad, since they're not that cheap), but I thought I'd check here first: anyone had any success rehabilitating moldy bannetons? I tried doing a diluted bleach spray & scrub followed by a long time drying in the sun, but it didn't seem to do anything. And now I'm also left wondering about the wisdom of putting bleach on the things that hold my proofing loaves... not THAT interested…

A while ago I wrote about brotforms, the German coiled cane proofing baskets that leave a spiral pattern on the crust of your loaf. What if you don't have a brotform, or don't want that spiral pattern? A banneton, French cousin to the brotform, is a woven wicker basket that usually has a linen fabric liner sewn into it. A basket provides support for a proofing loaf; the linen liner reduces sticking and yields a smoother crust than an unlined basket. While I do proof most of my boules and…

I think I finally figured out how to post pictures. A while back kippercat requested to see pictures of my homemade bannetons. Here they are. Made from dollar store wicker baskets and discount store cloth. Cost a little over a buck each. Also a picture of breads made in them. I call it thirds bread. 100% flour equals 1/3 whole wheat, 1/3 rye, 1/2 A.P. flour. 1/3 sourdough starter, 2/3 hydration. plus 2% salt. an easy workable recipe.
