It is the Mexican version of pulled pork, except it is slow cooked in lard for a crispy exterior and super tender & moist on the inside. This dish originated in the state of Michoacán, and every region has their own way of making it. My recipe isn’t particularly from any region- this is just how I like it, pulling ideas from the different ways it is made across Mexico. Aside from being super delicious and packed with flavor, a big reason why I love this dish is because it freezes really well! You can make large batches and freeze for easy weeknight dinners. Daisy Annaly Campuzano on Instagram: "STOVETOP CARNITAS RECIPE 🌮🤎👇🏼  3 lbs + 2 oz Pork Shoulder 3 1/2 Tsp Sea Salt from @osmosalt to season the meat  Additional Ingredients:  1/4 Tsp Cumin Seeds 4 Cloves 1 Tbsp Black Pepper 1/2 Tsp Thyme 1 Tsp Dried Rosemary 1 1/2 Tsp Salt  2 Bay Leaves  A bunch of Fresh Oregano 1/2 Onion 1 Orange  1 Garlic 🧄 1 Cup Water 1/2 Cup Milk OR Coke  2 lbs Lard   Make sure to keep flipping the meat as it’s cooking. Flip every 30 minutes during the first hour. Flip every 10-15 minutes after that.   If it’s browning too fast lower the temperature!  You’ll know the carnitas are ready once they fall apart easily. Total cook time is approximately 2 hours. Smaller pieces of meat will be done first before the larger ones.
