This is recipe #5 of my meal prep series and one of my favorites to make for lunch! It’s great to meal prep ahead of time and when you’re ready to eat it you can throw it into a wrap, make a sandwich or just eat it plain! Super easy to make, you guys are gonna love it. Here’s the recipe 🤍

Ingredients
-1 15oz can chickpeas 
-1/4 cup red onion finely diced 
-1/4 cup dill pickles finely diced 
-celery (I hate celery so I don’t add it but feel free to add it if you want!)
-1/3 cup vegan or regular mayo (can also sub Greek yogurt) 
-1/2 lemon juiced 
-2 tbsp Dijon mustard 
-1 tbsp pickle juice 
-1/2 tsp salt 
-1/2 tsp pepper 
-1/4 tsp smoked paprika
