Ingredients ✨

1/4 cup olive oil
1 onion diced
1/2 cup leeks (optional)
1/2 cup rice-Carolina
1/2 cup shredded carrots
1/2 cup crushed tomatoes
1/2 cabbage shredded
Salt and pepper
1 tsp paprika
Lemon and parsley (for serving)

Instructions

1. In a medium pot heat the oil, add the onion, leeks and the carrots, sauté until soft about 5 minutes
2. Add the cabbage and mix until is coated with the olive oil. Add the salt, pepper, tomatoes and paprika. Stir for 2-3minutes
3. Add 2 cups hot water and simmer for 20-25 minutes with pot covered over top until the cabbage is soft. You can add more water if it is needed
4. Add 1/2 cup uncooked rice, stir so that Greek Cabbage, Onion Leeks, Cabbage Rice, Shredded Carrots, The Onion, Recipe Ingredients, Shredded Carrot, More Water, Crushed Tomatoes
