This no-cook, vegetarian recipe is inspired by the Greek Veggie Pita Wrap served at one of my favorite local lunch spots. These falvorful sandwiches are so good and are actually full of healthy veggies and protein too. Easy to make at home with hummus, pitas, cucumberm lettuce, tomato, feta cheese, red onion, olives and Greek dressing. No cooking required. Ready in just 10 minutes! A tasty little lunch or dinner.
