1 tsp red miso paste OR 2 tsp white miso
Peel of ½ unwaxed, organic lemon
Juice of ½ lemon
Drizzle of extra virgin olive oil
Pasta cooking water
200-220g (7-8 oz) durum wheat semolina pappardelle
Toppings
Grated lemon peel
Ground black pepper
Fresh basil

METHOD
Start by cooking the pasta in abundant salted water.
