Ok Ladies that wanted this recipe, remember most of the time when I cook I'm just making it up as I go so you'll have to make your own adjustments :)
Chicken/Bacon/Veggie Rolls
1 pkg egg roll wrappers
3 boneless/skinless chicken breasts diced small
bacon cut into pieces-however much you want u can't go wrong with bacon :)
... In a your chopper/processor:
1 sm zuccini, onion, carrot, green/orange(or whatever) peppers, mushrooms, about 1 garlic clove
(I considered cabbage also, but decided brown/wild rice would be better for the filler)
Season with dried chives, parsley, pepper, and I love Weber's Garlic and Herb seasoning so used this. Do not add salt, the bacon did that for you :)
Cook in 1 can chicken broth : 1/2 cup brown rice and about 1/4 cup wild rice (this takes almost an hour so start it first)
cook your bacon to not quite crispy, I had some really meaty bacon so just left the little bit of grease in the pan. Add your chicken to the bacon and cook, then add your chopped veggies and saute. Add rice to this when done, roll them suckers up in the egg roll wrappers and fry! Yum A Freakin Yum! I served with sliced tomatoes and it really set off the rolls nicely!
