What ya need: 3 cups cooked quinoa 1 cup steamed peas 1 cup sautéed asparagus 1 cup sautéed zucchini 1/2 cup vegan feta 1 can rinsed and drained chickpeas 1/4 cup fresh dill Dressing: 1/4 cup olive oil 3 tbsp lemon juice 1 tbsp white wine vinegar 1 tsp dijon mustard 1/2 tsp salt Pepper and garlic to taste Whisk together dressing until combined and then pour over your salad ingredients! *saute the zucchini and asparagus in olive oil together, steam peas in the microwave

GRILLED PEACH AND BURRATA SALAD WITH BALSAMIC REDUCTION Ingredients: 4 ripe peaches, halved and pitted 1 tbsp olive oil 8 oz burrata cheese 4 cups arugula or mixed greens ¼ cup fresh basil leaves ¼ cup balsamic vinegar 1 tbsp honey Salt and pepper to taste Instructions: Heat grill to medium-high. Brush peach halves with olive oil and grill for 2-3 minutes on each side until grill marks appear. In a small saucepan, simmer balsamic vinegar and honey until reduced by half and thickened, about 5 minutes. Arrange greens on a platter, place grilled peaches and burrata on top, sprinkle with fresh basil, and drizzle with balsamic reduction. Season with salt and pepper. Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins | Kcal: 250 per serving | Servings: 4
